We are seeking an experienced and motivated Certified Dietary Manager (CDM) to oversee the daily operations of our Dietary Department in a skilled nursing and rehabilitation facility. The ideal candidate will have previous experience managing dietary services in a nursing home or healthcare setting, strong knowledge of New York State Department of Health (DOH) regulations, and the ability to lead a team while ensuring high standards of food safety, quality, and resident satisfaction.
Oversee the day-to-day operations of the Dietary Department and ensure efficient meal service.
Ensure compliance with New York State Department of Health (DOH), CMS, and applicable federal and state regulations.
Maintain compliance with all food safety, sanitation, infection control, and dietary service requirements.
Plan, coordinate, and supervise meal preparation and service according to residents' nutritional needs and prescribed diets.
Ensure residents receive meals and snacks that are prepared, portioned, and served according to established menus and dietary requirements.
Work closely with the Registered Dietitian, Nursing Department, Administrator, and other interdisciplinary team members.
Monitor and accommodate therapeutic diets, texture modifications, food allergies, and special dietary needs.
Supervise, train, schedule, and evaluate dietary staff, including cooks, dietary aides, and other department employees.
Ensure appropriate staffing levels and maintain department schedules.
Monitor food inventory, ordering, receiving, storage, and proper rotation of food supplies.
Control food costs and minimize waste while maintaining quality standards.
Conduct and document required dietary inspections, audits, temperature logs, sanitation checks, and other quality-control activities.
Maintain accurate dietary records and documentation required for regulatory compliance.
Participate in survey preparation and regulatory inspections, including responding to deficiencies and implementing corrective actions when necessary.
Address resident and family concerns regarding meals and dietary services in a professional and timely manner.
Conduct regular rounds of the kitchen and dining areas to ensure cleanliness, safety, and compliance.
Ensure proper food handling, storage temperatures, sanitation procedures, and kitchen safety practices.
Participate in QAPI and performance-improvement initiatives related to dietary services.
Ensure department policies and procedures are followed consistently.
Provide leadership, accountability, and ongoing training to dietary employees.
Perform other duties as assigned by the Administrator.
Certified Dietary Manager (CDM) certification required.
Previous experience as a Dietary Manager, Food Service Director, or similar leadership position in a skilled nursing facility/nursing home strongly preferred.
Strong knowledge of NY State DOH and CMS dietary regulations.
Experience with therapeutic and modified diets in a long-term care setting.
Knowledge of food safety, sanitation, infection control, and HACCP principles.
Strong leadership and staff-management skills.
Excellent communication and organizational skills.
Ability to work independently, prioritize responsibilities, and manage a fast-paced department.
Ability to work effectively with residents, families, staff, physicians, dietitians, and facility leadership.
Strong attention to detail and documentation skills.
