Qualifikationen

• 5+ years of leadership experience in food production or high-volume kitchen environments.
• Experience transitioning to centralized commissary/large-scale production.
• Strong knowledge of HACCP, food safety regulations, and QA/QC programs.

• Lead the transition from restaurant-based production to a centralized commissary model.
• Develop scalable production systems to support growth and new kitchen openings.
• Create and maintain SOPs for production, sanitation, packaging, labeling, and traceability.
• Develop production schedules based on forecasts, inventory, labor, and distribution needs.
• Oversee daily production across hot, cold, preparation, packaging and finished goods.
• Build and lead a high-performing production leadership team and manage staffing plans.
