Job summary

Chartwells Higher Education is seeking a Sous Chef to oversee the Culinary Department operations at the University of Redlands. You will assist in supervising, preparing, and cooking diverse items, help develop menus, and manage ordering with the Executive Chef.

Qualifications

• A.S. or equivalent experience is preferred.
• Progressive culinary/kitchen management experience is preferred.
• Catering experience is a plus.
• Experience in high-volume, complex foodservice operations is highly desirable.
• Institutional and batch cooking experience is helpful.
• Knowledge of food and catering trends focusing on quality, production, sanitation, cost controls, and presentation.
• Computers experience including Word, Excel, PowerPoint, Outlook, email and Internet.

Responsibilities

• Assist the Executive Chef with cost controls and expenditures for the account.
• Assist the Executive Chef with planning and creating menus.
• Produce and execute catering events.
• Roll out new culinary programs with marketing and culinary teams.
