Chartwells Higher Ed is seeking a Sous Chef at the University of Redlands in Redlands, CA. The role oversees the Culinary Department operations alongside the Executive Chef, assisting with menu development, cost controls, and catering events, in a fast-paced, high-volume foodservice setting.

The position offers growth within a diverse organization, emphasizing quality, sanitation, and client satisfaction, with the chance to roll out new culinary programs across a university campus.

Qualifications

• A.S. or equivalent experience in culinary field.
• Progressive kitchen management experience.
• Experience in high-volume, complex foodservice operations.
• Institutional and batch cooking experience helpful.
• Knowledge of food trends, cost controls, sanitation.
• Computer proficiency with Office suite.
• ServSafe certification preferred.

Responsibilities

• Assists the Executive Chef with cost controls and expenditures for the account.
• Assists the Executive Chef with planning and creating menus.
• Produces and executes catering events.
• Rolls out new culinary programs with marketing and culinary team.
