Job summary

The University of Nebraska–Lincoln is seeking a Dining Service Production Manager to oversee production in the residence hall dining center. The role involves planning menu items for student meals, supervising staff, and ensuring high-quality, safe food preparation aligned with recipes and policies.

You will work with managers and team leaders to evaluate recipes using the menu management system, foster a positive work environment, and deliver healthful meals and strong service for students,

Qualifications

• Four years culinary/food service production experience in a high-volume operation.
• Bachelor’s degree or equivalent experience in relevant field preferred.
• Knowledge of health and safety requirements and safe food handling techniques.

Responsibilities

• Assist with the management and supervision of other operational areas of the university residence hall dining center.
• Plan and coordinates the production of menu items for student meal service and special events with hands-on participation in safe, high-quality meal prep.
• Ensure adherence to recipes and production policies for consistency, quality, freshness and appearance.
• Work with the manager, assistants and team leaders to evaluate and standardize recipes using the menu management system.
• Maintain a positive working environment for employees.
• Provide a safe, inviting atmosphere with healthful meal choices and quality service for students, staff, faculty and guests.
