Job summary

Chartwells Higher Education Dining Services in Boise, ID is seeking an Executive Chef to oversee kitchen operations and ensure safe, sanitary work environments. You will prepare or direct meal prep per corporate programs and maintain quality and consistency across menus.

The role requires hands-on culinary leadership, strong food safety knowledge, and experience in high-volume, complex foodservice settings; catering excellence is a plus.

Qualifications

• A.S. or equivalent experience required.
• 3–5 years progressive culinary/kitchen management experience.
• Extensive catering experience preferred.
• High-volume, complex foodservice operations experience.
• Institutional and batch cooking experience.
• Hands-on chef experience required.
• Knowledge of food and catering trends with focus on quality, production, sanitation and cost controls.
• Proficient with computers; MS Office, email and Internet.
• ServSafe certification desirable.

Responsibilities

• Plan regular and modified menus according to guidelines.
• Follow standardized recipes, portioning, presentation standards; use production worksheets and waste logs; taste meals for quality.
• Train kitchen staff in food preparation, safety and sanitation per standards.
• Establish and maintain cleaning and maintenance schedules for equipment and areas.
• Maintain inventory within guidelines and ensure product availability.
• Decide on leftover food utilization within company guidelines.
• Comply with health, sanitation and safety regulations; participate in audits.
• Adhere to safety policies; participate in meetings and professional programs.
