Willy Street Co-op in Madison, WI seeks a Butcher II to lead meat and seafood counter activities, ensuring high quality cuts and customer guidance. Responsibilities

• Cut, trim, bone, tie, and grind meats (beef, pork, poultry, fish) for cooking forms.
• Shape and tie roasts using boning knife and twine.
• Cure, smoke, tenderize and preserve meat.
• Maintain safe, clean meat department complying with safety standards.
• Assist with inventory, price accuracy, and supplier relations.
• Record meat received/issued and monitor inventory levels in SMS.
• Support daily operations and cross‑department collaboration.

You're passionate about working in an organization that values and promotes diversity, equity and inclusion.What You'll Do: You will lead the efforts to create an exciting product selection at our meat and seafood counter, researching new items and adding recipes as determined in conjunction with the Meat Department Manager and Purchasing department. In addition, you'll collaborate with other members to support the following areas:Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking formShape and tie roasts use a boning knife and twineCure, smoke, tenderize and preserve meatAssure a safe, efficient, and clean meat department, adhering to safety and cleanliness standards.Stay abreast of industry trends, natural and organic practices, recalls and warningsOrder product using SMS as needed, working with the Meat Manager to maintain proper inventory levelsAdhere to proper receiving protocols that ensure delivery quality and accurate quantities per invoiceComplete inventory and enter product loss into SMS according to established procedures and time framesMaintain effective working relations with suppliersWork closely with the Logistics staff to ensure accurate data management including inventory numbers, ingredients, recipes and correct pricingAssist as needed with daily operations, routines, and procedures.
