Peregrine Hospitality in Lawrence, KS is seeking a Breakfast Lead Server to oversee the morning dining operation and ensure a smooth, welcoming service. You will lead pre-service setup, coordinate with kitchen and service teams, and maintain cleanliness and stock.

The role requires strong communication, multitasking, and leadership, plus the ability to work 6:30am to 2:30pm four or more days a week. Tipped position with focus on guest experience and adherence to safety standards.

The Breakfast Lead Server is responsible for overseeing morning dining operations, ensuring a smooth and efficient breakfast service while also performing standard server duties. This includes leading pre-service setup, coordinating with kitchen and service teams, maintaining stock and cleanliness, and delivering exceptional guest experiences. This role requires strong communication, multitasking, and leadership skills.

Essential Functions

• Greet guests warmly and take accurate food and beverage orders.
• Demonstrate in-depth knowledge of all menu items, including ingredients and common allergens.
• Ensure all orders are accurate and modifications or substitutions are properly communicated.
• Lead pre-shift setup for the breakfast service, ensuring all necessary supplies and materials are ready.
• Stock all to-go materials.
• Set up the kitchen line with essential sauces.
• Break down and discard all boxes appropriately; use trash compactor as needed.
• Ensure all silverware is rolled and ready before dinner service begins.
• Stock all glassware before dinner service.
• Pre-bus and reset tables promptly and efficiently.
• Maintain a clean and organized dining room and server station at all times.
• Accurately process guest payments using POS systems.
• Complete all assigned opening and closing duties, including side work.
• Support and assist fellow servers and kitchen staff as needed.
• Monitor equipment functionality; report maintenance issues or supply shortages to management.
• Uphold cleanliness, food safety, and sanitation standards in all areas.
• Follow company service standards and policies, including safety protocols.
• Work cooperatively with co-workers, kitchen, and management as a team leader.
• Take initiative to improve service standards and support operational goals.
• Ensure punctuality and reliability in all scheduled shifts.
• Perform additional tasks as assigned by supervisors or management.

• Must be able to prioritize and work efficiently with limited supervision.
• Must be detail oriented and able to multi-task efficiently.
• Must be able to speak and understand and communicate the primary language(s) used in the workplace.
• Must possess excellent communication, follow up, and organizational.
• Must have the ability to push, pull bend, squat and lift on a regular basis.
• Safety requirements of PPE as needed for duty assigned and with use of required tools and equipment.
• Must be able to perform job functions with attention to detail, speed and accuracy; prioritize, organize and follow-up.
• Be a clear thinker, remaining calm and resolving problems using good judgment.
• Follow directions thoroughly; understand a guest's service needs; work cohesively with co-workers as part of a team.
• Knowledgeable and ensure compliance of all state food safety guidelines.

Job Qualifications/Requirements

Education: High School Diploma or GED equivalence required.

Experience: Minimum 1 year experience in hotels, banquets, or events.

Additional: Ability to work 4+ days a week at 6:30am (shift goes till 2:30p); Will be required to work flexible scheduled shifts based on business needs.

Physical Requirements

The minimum physical requirements for this position include but are not limited to:

• Must be able to lift and/or carry up to 40 pounds frequently to assist guests
• Ability to stand for extended periods of time
• Ability to hear, understand and communicate orally and in writing to communicate with staff, vendors, and guests a normal in-person and phone conversation
• Ability to bend and twist, push, and pull, stoop, and kneel
• Ascend and descend a ladder
