Job summary

METRO CAFE EL SEGUNDO is seeking an experienced Lead Line Cook with strong breakfast and brunch experience to join our kitchen team. You will lead line cooks during service, ensure high quality, and help supervise daily kitchen operations in a fast-paced environment.

The ideal candidate has at least 3 years of line cook experience, leadership, and solid knowledge of food safety. Weekend and holiday availability is required, and a California Food Handler Card is preferred.

Qualifications

• Minimum 3 years of line cook experience, including leadership roles.
• Strong breakfast and brunch cooking experience required.
• Knowledge of egg cookery, breakfast meats, pancakes, waffles, sauces, and high-volume breakfast service.
• Understanding of proper cooking temperatures, food handling, and sanitation procedures.

Responsibilities

• Prepare and execute breakfast, brunch, and lunch menu items according to recipes and quality standards.
• Lead and support line cooks during service while maintaining a positive and productive work environment.
• Ensure all food is prepared, plated, and presented consistently.
• Monitor food quality, portion control, and kitchen cleanliness.
• Assist with ordering, inventory management, and minimizing food waste.
• Train and mentor kitchen staff on recipes, cooking techniques, and food safety procedures.
• Maintain compliance with all Health Department regulations and food safety standards.
• Ensure proper storage, rotation, and labeling of food products (FIFO).
• Open and close kitchen operations as needed.
• Work closely with management and chefs to maintain menu consistency and operational efficiency.
