Job summary

Scratch Bakery Cafe is seeking a skilled Bread Baker for our Laguna Hills facility to join the overnight production team. You will mix, shape, proof, and bake a variety of scratch-made breads, ensuring quality, appearance, and freshness.

You should have a minimum of 3 years' professional bread baking experience with fermentation expertise and the ability to lift 50 lbs in a fast-paced environment. Overnight shift is 8:00 PM – 4:30 AM.

Qualifications

• Strong understanding of fermentation, hydration, shaping, and scoring techniques.
• Ability to lift 50 lbs and stand for long periods in a fast-paced environment.

Responsibilities

• Mix, shape, proof, and bake a variety of breads (sourdough, baguettes, buns, focaccia, brioche).
• Operate ovens, mixers, proofers, and bakery equipment safely.
• Maintain dough fermentation schedules and temperature controls.
• Ensure a clean and sanitary workspace per food safety standards.
• Follow recipes and portioning standards precisely.
• Communicate with pastry and café teams for coordinated production.
• Assist with prep work and mise en place for following shifts.
• Be punctual and dependable for overnight production flow.

We are seeking a skilled and passionate Bread Baker to join our overnight production team in our Laguna Hills facility.

Job Responsibilities

• Mix, shape, proof, and bake a variety of scratch-made breads (sourdough, baguettes, various buns, focaccia, brioche, etc.) Maintain consistent product quality, appearance, and freshness
• Operate ovens, mixers, proofers, and other bakery equipment safely and efficiently
• Manage dough fermentation schedules and temperature controls
• Ensure a clean and sanitary workspace in compliance with food safety standards
• Follow recipes and portioning standards precisely
• Communicate with pastry and café teams for coordinated production
• Assist with prep work and mise en place for following shifts when needed
• Be punctual and dependable for overnight production flow
