Job summary

Firestone Walker Brewing Company in California is seeking a kitchen team member to support food preparation and service in our restaurant. You will follow recipes, ensure portions, and help maintain safety and sanitation standards.

You will train new kitchen staff, assist with scheduling, monitor equipment and inventory, control food costs, and ensure items are plated correctly while upholding company policies and guest service standards.

Responsibilities

• Assist team with food preparation and serving according to recipes and standards.
• Learn and apply kitchen safety, cleanliness, and sanitation practices.
• Assist with training new kitchen employees in BOH areas.
• Plan employees’ work schedules and assign work as required by anticipated business activity.
• Maintain equipment cleanliness and ensure good working condition via inspections and maintenance programs.
• Learn ordering procedures and PARS; ensure correct receiving quantities and conditions.
• Assist BOH team with controlling food cost and waste using standard recipes and procedures.
• Ensure items are correctly plated before leaving the kitchen.
• Communicate with management regarding policy violations and maintain daily cleaning schedules.
• Monitor proper food holding and refrigeration temperature through line checks.
• Fill in as needed to support guest service standards.

Job Duties And Responsibilities

Responsibilities of the position include, but are not limited to:

• Assist team members and ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards
• Learn and exemplify company/department safety rules, including safe operation of all kitchen equipment, cleanliness and sanitation practices, policies and procedures
• Assist with training new kitchen employees in all areas of the BOH
• Plan employees’ work schedules and assign work as required by anticipated business activity
• Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs
• Learn and gain knowledge of ordering procedures and PARS; understand proper ordering & receiving policies by ensuring all product has been received in correct unit count and condition
• Assist the BOH team with controlling food cost and usage by using standard recipes, measuring procedures and waste control.
• Ensure all items are correctly plated before leaving the kitchen
• Maintain working knowledge of company & restaurant policies regarding personnel and communicate with the management for any and all violations of company policies, rules and procedures
• Maintain appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas on a daily basis
• Check and maintain proper food holding and refrigeration temperature control points at all times by understanding and grasping the concepts of line checks and quality checks
• Fill in where needed to ensure guest service standards and efficient operation
