Job description

Birdseye is a rooftop restaurant and bar built around one thing: creating memorable experiences. Guests come for the view, stay for our offerings, and return because of how we made them feel.

We are entering an exciting new chapter with an elevated cocktail program designed to match our setting. We are intentional, quality-driven, and experience-focused, while maintaining the warmth and approachability that defines our hospitality.

The Bartender Role:

We are looking for an experienced, professional bartender who takes genuine pride in their craft and understands the responsibility that comes with working behind the bar.

Our ideal candidate is knowledgeable, confident, and comfortable in a high-volume environment. Someone who can execute a beautifully balanced cocktail with precision, manage a busy service well, and still make the guest sitting across from them feel like the most important person in the room.

Just as importantly, we value integrity, maturity, and accountability. We want someone who treats bartending as a profession, respects the business, and understands that trust is earned through consistent actions.

What You'll Be Doing:

Deliver Exceptional Hospitality:

  • Create genuine connections with guests through attentive, personable service.
  • Anticipate guest needs and provide thoughtful recommendations.
  • Balance hospitality with efficiency during high-volume service.

Execute an Elevated Beverage Program:

  • Prepare cocktails with precision, consistency, and attention to presentation.
  • Follow established recipes, measurements, and service standards.
  • Demonstrate strong knowledge of classic cocktails, spirits, wine, and beer.
  • Maintain quality and consistency regardless of business volume.

Protect the Integrity of the Operation:

  • Handle alcohol responsibly and follow company policies without exception.
  • Maintain accurate transactions, responsible pouring practices, and inventory accountability.
  • Communicate mistakes, discrepancies, and operational concerns honestly.
  • Take ownership of your station, equipment, and responsibilities.

Support the Team:

  • Maintain a clean, organized, and efficient bar.
  • Support teammates and contribute to smooth service flow.
  • Communicate clearly and remain composed under pressure.
  • Contribute to a positive, professional, and accountable team culture.
What We're Looking For:
  • 4+ years of bartending experience, preferably in high-volume or elevated hospitality.
  • Strong knowledge of cocktails, spirits, wine, and beverage fundamentals.
  • Ability to execute quickly without sacrificing quality or hospitality.
  • Composure, maturity, reliability, and excellent judgment.
  • A genuine sense of ownership and personal accountability.
  • Willingness to learn, receive feedback, and continually improve.
  • California RBS and Food Handler certifications, or ability to obtain them within required timelines.
What Makes Someone Successful Here:

We believe great bartenders bring more to the table than technical ability.

They take pride in the details, understand the importance of consistency, and recognize that every decision behind the bar affects the guest, their teammates, and the business.

They know when to move quickly, when to slow down for a guest, and how to maintain their composure when the bar is three tickets deep.

They don't cut corners when no one is watching. They take responsibility for their mistakes, communicate honestly, and understand that professionalism is demonstrated through actions, not titles.

We want people who enjoy the work, bring positive energy to the team, and understand that great hospitality requires both discipline and personality.

Why Work With Us?
  • Work in one of La Jolla's most distinctive oceanfront dining environments.
  • Be part of an evolving cocktail program focused on quality, creativity, and execution.
  • Work alongside a team that values craftsmanship, hospitality, and continuous improvement.
  • Opportunities to expand beverage knowledge and contribute ideas.

If you're an experienced bartender who values great hospitality, takes pride in your craft, and believes professionalism and integrity are essential to the job, we'd love to meet you.
