Qualifications

Banquet Sous Chef

The Lincoln Marriott Cornhusker Hotel in search of a talented and driven leader as our next Banquet Sous Chef. This key role on our culinary team will have lead the banquets culinary operations.

Part of Milwaukee based Marcus Hotels & Resorts, the Lincoln Marriott Cornhusker Hotel in downtown Lincoln has been serving Nebraska's capital city for nearly 90 years and has evolved as the benchmark for hospitality.

What will you be doing?

  • Interview, hire, train, supervise, schedule, and participate in activities of banquet cooks, and other personnel involved in preparing, cooking, and presenting food in accordance with recipe notation, productivity standards, cost controls, and forecast needs.
  • Schedules appropriate number of staff according to daily needs of banquet functions and weekly forecasts.
  • Maintain banquet event orders and food delivery requests per daily guidelines.
  • Responsible for and supervises daily culinary and stewarding operations in the absence of Executive Chef assigning, in detail, specific duties to all associates under supervision for efficient operation of kitchen.
  • Ensure that all standards of cleanliness and maintenance are consistently met throughout the department by all associates per Marcus Hotels and Resorts, Marriott and Lancaster County Health Department standards.
  • Listen actively and communicate clearly while interacting with internal and external customers to promote food products.Analyze feedback from clients and associates; make suggestions working with the Executive Chef to implement suggestions for improvement.
  • Monitor staff performance, product quality and production flow; foster improvement where necessary.
  • Adhere to control procedures for cost and quality.

What you will bring to the role?

  • High school education required.Minimum of 2 years formal culinary schooling or equivalent work experience in large scale banquet preparation, preferred.
  • Good working knowledge of accepted safety and sanitation standards.
  • Extensive experience with slicers, mixers, grinders, food processors, etc.
  • Thorough knowledge of food products, standard recipes, and proper preparation.
  • Knowledge of food and labor cost controls and the calculation of these controls.
  • Basic mathematical skills necessary to understand recipes, measurements, requisition amounts, and portion sizes.
  • Ability to perform duties in confined spaces within extreme temperature ranges.
  • Must be able to work a varied schedule to include days, evenings, weekends, holidays and the ability to work under pressure.
