Position Purpose

Coordinate, plan, and supervise the production, plating, and presentation of food at all Banquet events in a cost-effective, safe manner to meet or exceed guest expectations and attract future business. Responsible for the daily production of all banquet food, assisting in menu creation and recommending procedural and production changes. Reports to the Banquet Chef.

Examples Of Duties

  • Supervise assigned staff, communicate goals, and assign work to ensure proper coverage. Enforce policies and procedures.
  • Manage staffing actions, conduct monthly meetings, trainings, and safety checks, and document accordingly.
  • Develop new menu concepts, prepare, test, and cost out new menu items.
  • Oversee preparation methods, portion sizes, and timeliness; control food usage to minimize waste.
  • Maintain cleanliness and proper storage procedures, and ensure compliance with sanitation and health regulations.
  • Review upcoming menus, complete requisitions, and maintain inventory control.
  • Ensure kitchen readiness for upcoming days, proper equipment functioning, and stock levels.
  • Assist with banquets, parties, and special events, including cooking and food prep as needed.
  • Promote teamwork and quality service through communication with other departments.
  • Participate in meetings such as Chefs meetings, BEO meetings, Pre-Con meetings, etc.

Physical Requirements

Frequency key: Rare, Occasional, Frequent, Constant. Activities include sitting, walking, climbing stairs, standing, crouching, reaching, grasping, pushing/pulling, vision, hearing, talking, smell, taste, and lifting up to 50 lbs. Occasional travel.

Other Duties

Support the Trump National Doral - Miami Cultural Foundation, demonstrate service standards, and maintain attendance standards.

Safety Requirements

Use PPE when necessary, report defective PPE or equipment.

Knowledge, Skills, and Abilities

Thorough knowledge of catering and food profession, ability to perform analytical work.

Education

High school diploma or equivalent required; college degree preferred.

Experience

Minimum three years in culinary/management roles.

Licenses or Certificates

None required.

Grooming/Uniforms

Maintain a neat, clean, and well-groomed appearance, with specific uniform guidelines provided during orientation.
