Overview

The Banquet Server is responsible for preparing for and serving guests during banquet functions in accordance with hotel standards of food and beverage quality, presentation, sanitation, and warm hospitality.

Key Duties & Responsibilities

1. Review and understand the Banquet Event Order (BEO); complete setup according to the BEO.
2. Set tables in assigned area with clean, pressed linen, silverware, china, and glassware; properly fill table complements.
3. Learns the menu for each function and can explain major ingredients and preparation methods.
4. Be present at your station at least 15 minutes prior to the start of the function.
5. Respond to guest requests and advise supervisor if necessary.
6. Keep station neat and clean during service.
7. Refill drinks, remove service items, and ensure guest needs are met.
8. Follow proper procedures for in-room clearing and aisle tray breakdown.
9. Assist in setting up and breaking down buffet and special food service tables.
10. Serve and break down banquet bars as assigned.
11. Follow cash and guest check procedures accurately.
12. Return excess food to the kitchen following sanitation guidelines.
13. Complete side work such as refilling condiments and cleaning equipment.
14. Maintain cleanliness and organization in back hall, linen racks, and storage areas.
15. Learn and apply proper service procedures.
16. Assist co-workers as needed and stay updated on hotel events.
17. Maintain responsible alcohol service certification.
18. Mix and serve alcoholic and non-alcoholic drinks during events.

Coffee Break Duties

1. Set up, serve, and clean coffee break areas and carts.
2. Ensure breaks are attractive, complete, and within time parameters.
3. Prepare beverages according to standards.
4. Secure beverage coolers at shift end.

Education and Experience

• High school diploma or GED preferred.
• Previous banquet server experience preferred.
• Must be TIPS, CARE, or equivalent certified by first day.
