Job summary

Fontainebleau Miami Beach seeks an experienced Banquet Culinary Director to lead the banquet kitchen, ensuring high-quality, high-volume banquet and catering execution for weddings, conventions, and VIP events. You will partner with the Executive Chef, Banquet Director and Catering teams to uphold the property's culinary standards.

Qualifications

• Minimum 10 years progressive culinary experience in luxury hotel, resort, banquet, catering or large-scale events.
• Strong leadership, coaching and training skills for a large culinary team.
• Knowledge of banquet production: plated meals, buffets, receptions, hors d'oeuvres, action stations.

Responsibilities

• Lead banquet kitchen operations end-to-end, ensuring quality, safety and guest satisfaction.
• Collaborate with Executive Chef, Banquet Director and Catering teams to plan and execute events.
• Oversee food cost, labor, inventory, and waste management across all banquet functions.
• Train, coach, and develop culinary staff to maintain a high-performing team.
• Ensure compliance with health, sanitation, HACCP, OSHA and company standards.
