Job summary

Fairmont Scottsdale Princess is seeking a culinary professional to deliver guest-focused service in a luxury hotel setting. You will prepare and present dishes for la carte or buffet service, contribute to daily briefings, and uphold safety, sanitation, and quality standards.

The role requires experience in Garde Manger and Hot Kitchen in a 4- or 5-Diamond environment, knowledge of Southwest cuisine, and flexibility to work AM/PM shifts including weekends.

Qualifications

• Diploma or Certification in a Culinary discipline is an asset.
• Previous experience in Garde Manger and Hot Kitchen in a 4- or 5-Diamond hotel, banquet kitchen.
• Southwest cooking knowledge is preferred.
• Strong interpersonal and problem solving abilities.
• Highly responsible and reliable; works well under pressure.
• Flexible shifts including mornings, evenings, weekends.

Responsibilities

• Consistently offer professional, friendly and proactive guest service while supporting colleagues.
• Prepare and service all food items for a la carte or buffet menus according to hotel recipes and standards.
• Share ideas and feedback in daily shift briefings.
• Maintain proper rotation of products in chillers to minimize wastage.
• Ensure storeroom requisitions are accurate and up-to-date.
• Know all menu items, daily features and promotions; assist with cleanliness and sanitation.
• Follow kitchen policies, procedures and service standards; adhere to safety policies.
• Other duties as assigned.

Job Description

• Actively share ideas, opinions and suggestions in daily shift briefings
• Maintain proper rotation of product in all chillers to minimize wastage/spoilage
• Ensure storeroom requisitions are accurate
• Have full knowledge of all menu items, daily features and promotions
• Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
• Follow kitchen policies, procedures and service standards
• Follow all safety and sanitation policies when handling food and beverage
• Other duties as assigned

Qualifications

• Creative and passionate about food and customer service
• Adhere to Fairmont Scottsdale Princess Grooming Guidelines
• Previous experience in the Culinary field required in Garde Manger and Hot Kitchen in a 4 or 5 Diamond Hotel - Banquet kitchen
• Southwest Cooking knowledge
• Diploma or Certification in a Culinary discipline an asset
• Strong interpersonal and problem solving abilities
• Highly responsible & reliable
• Ability to work well under pressure in a fast paced environment
• Ability to work cohesively as part of a team
• Ability to focus attention on guest needs, remaining calm and courteous at all times
• Must be able to work flexible shifts including AM, PM, evenings and weekends
