Job summary

Destination Geneva National in Lake Geneva, Wisconsin, seeks a Banquet Cook to join its premier culinary team. You will assist the Banquet Chef, prepare diverse banquet dishes, and coordinate with kitchen staff to ensure timely delivery for events.

You’ll maintain high standards of food safety, quality, and presentation, plating dishes with garnish and visual appeal for weddings, conferences, and resort functions.

Responsibilities

  • Assist the Banquet Chef in the preparation of menu items for banquets and events, following standardized recipes and portion control guidelines.
  • Prepare a variety of appetizers, salads, main courses, desserts, and other culinary offerings, ensuring high-quality taste, texture, and presentation.
  • Coordinate with the Banquet Chef and kitchen staff to ensure efficient workflow and timely delivery of food.
  • Execute cooking techniques with precision and attention to detail, maintaining the desired flavor, texture, and consistency of dishes.
  • Ensure proper cooking temperatures and monitor food items to prevent overcooking or undercooking.
  • Collaborate with the culinary team to coordinate and synchronize the preparation and plating of multiple dishes for large-scale banquets and events.
  • Adhere to strict food safety and sanitation standards, following HACCP guidelines and local health regulations.
  • Properly handle, store, and rotate food products (using FIFO) to maintain freshness and prevent contamination.
  • Maintain a clean and organized workstation, as well as assist with general kitchen cleaning tasks.
  • Assist in the final plating and presentation of dishes, ensuring visual appeal and adherence to banquet standards.
  • Apply garnishes, sauces, and artistic touches to enhance the visual impact of each plate.
  • Collaborate with the Banquet Chef to ensure consistency in presentation across all banquet events.
  • Collaborate effectively with the culinary team, assisting in the coordination of activities and maintaining open lines of communication.
  • Support and assist other kitchen staff as needed, fostering a positive and cooperative work environment.
  • Communicate any special requests, dietary restrictions, or guest preferences to the Banquet Chef and culinary team.

With panoramic course and lake views, Destination Geneva National's sprawling 56,000-square-foot Clubhouse sets the stage for celebrations and memories year-round with its exquisite on-site member and resort events while drawing loyal diners, overnight guests and golfers to the on-site turf smokehouse and new Paloma Cantina alongside GN's one-acre Himalayas-style putting course, The Dance Floor. GN Banquets also support special events at the neighboring Ridge Hotel.

This is your opportunity to join Destination Geneva National's premier Culinary team as Banquet Cook, working closely with the Banquet Chef and culinary team to prepare and deliver exceptional cuisine for banquets, conferences, weddings, and other special events.

ESSENTIAL FUNCTIONS
