The Banquet Chef is responsible for planning, coordinating, and overseeing the preparation of high-quality cuisine for banquets, weddings, and other special events at Edgewood Tahoe Resort. This role requires an individual with strong culinary skills, leadership abilities, and experience delivering premium service in a fast-paced, upscale environment. The Banquet Chef ensures consistent food quality, presentation, and service that aligns with the resort's 5-star standards.
Key Responsibilities:
- Oversee and manage all banquet kitchen operations, ensuring timely and high-quality food production for events.
- Design and update banquet menus in collaboration with the Executive Chef, reflecting seasonal trends and client preferences.
- Supervise banquet culinary staff, including scheduling, training, and performance evaluation.
- Coordinate closely with the events and catering teams to ensure seamless service and menu execution for weddings, galas, corporate events, and private functions.
- Maintain inventory levels and work with the purchasing department to source premium ingredients within budget.
- Maintain proper food storage, labeling, and sanitation procedures in accordance with HACCP standards.
- Manage labor and food costs to meet departmental goals without compromising quality.
- Ensure all culinary preparations align with health, safety, and hygiene regulations.
- Serve as a culinary ambassador of the resort, representing its brand and commitment to excellence.
- Perform other related duties as assigned to support the overall success of the team and business.
Qualifications and Skills:- Ability to work flexible schedules, including nights, weekends, and holidays.
- Minimum 5 years of experience in high-end banquet or catering operations, with at least 2 years in a leadership role.
- Extensive knowledge of international cuisines, modern plating, and buffet presentation.
- Proven ability to lead and motivate a team in a high-volume environment.
- Strong organizational and time management skills with a keen eye for detail.
- Excellent communication and collaboration abilities.
- Ability to work under pressure and adapt to last-minute changes.
Physical Requirements:- Must be able to safely lift, move, and stack items weighing up to 40 lbs.
