Job summary

Nbutexas is seeking a Bakery Production Manager to lead high-volume artisan bread production across multiple retail locations. This hands-on role shapes product quality and team culture while supporting business growth.

The manager will oversee fermentation, mixing, shaping, proofing, and baking, recruit and train staff, and implement inventory, forecasting, and scheduling systems to drive efficiency and safety.

Qualifications

• 10+ years of artisan bread production experience in a high-volume bakery.
• Proven experience leading, training, and developing bakery production teams.
• Experience supporting multiple retail locations via centralized production.
• Strong technical expertise in artisan bread production and commercial baking.
• Effective production systems development and optimization.
• Knowledge of inventory management, production forecasting, and waste/labor efficiency.
• ServSafe, HACCP, or equivalent food safety certification.
• Strong communication and cross-functional collaboration skills.

Responsibilities

• Oversee daily artisan bread production across all shifts, ensuring quality and consistency.
• Apply expertise in fermentation, mixing, shaping, proofing, and baking a range of breads.
• Recruit, train, schedule, and develop bakers, shift leads, and production staff.
• Develop and maintain systems for inventory, ordering, forecasting, and scheduling.
• Troubleshoot technical baking challenges and optimize yields and efficiency.
• Conduct regular product evaluations and uphold food safety and sanitation standards.
• Build a productive, accountable, and team-oriented culture while driving continuous improvement.
