Unknown Bakery Concept, located in Jacksonville, FL, is seeking an experienced Bakery Production Manager to lead daily bakery and pastry production, train a high-performing team, and develop new products that align with European-inspired quality and craftsmanship.

The role calls for hands-on leadership, advanced baking knowledge, and a track record of maintaining top-quality outputs in a fast-paced environment.

Qualifications

• Proven leadership experience managing bakery/pastry production teams.
• Advanced knowledge of baking techniques, doughs, fermentation and production processes.
• Experience training, coaching, and scheduling bakery teams.
• Knowledge of inventory management, food costs, labor, yields, and waste control.
• Ability to maintain quality in a fast-paced, high-volume environment.

Responsibilities

• Lead daily bakery and pastry production from preparation through finished product
• Manage, train, coach, and develop the bakery production team
• Establish and maintain standards for recipes, techniques, portioning, baking, finishing, and product quality
• Create, test, and launch new bakery and pastry products
• Develop production schedules and organize workflow to meet volume and quality expectations
• Troubleshoot dough, fermentation, baking, equipment, and production challenges
• Monitor labor, food cost, yields, waste, and ingredient usage to improve efficiency and profitability
• Oversee inventory, purchasing, ingredient quality, and product availability
• Maintain rigorous food safety, sanitation, organization, and cleanliness standards
• Partner with leadership on seasonal offerings, product innovation, and continued growth of the bakery program

Bakery Production Manager Requirements

• Strong professional background in bakery, baking, or pastry production
• Proven leadership experience managing bakery, pastry, or high-volume food production teams
• Advanced knowledge of baking techniques, doughs, fermentation, ingredients, and production processes
• Strong ability to diagnose and resolve product quality and production issues
• Experience training, coaching, scheduling, and developing bakery production teams
• Knowledge of inventory management, purchasing, food cost, labor, yields, and waste control
• Ability to maintain quality and consistency in a fast‑paced, high‑volume production environment
• Ability to lift 50+ pounds and stand for extended periods

Preferred Bakery & Pastry Experience

• New product and recipe development experience
• Experience scaling and standardizing recipes for high-volume production
• Background improving bakery production systems, workflow, and efficiency
• Familiarity with clean‑label or additive‑free ingredients
• Independent, artisan, or owner‑operated bakery experience preferred
