Job summary

Pyramid Global Hospitality seeks an Assistant Restaurant Manager for Redfish Grill at South Seas on Captiva Island, FL. You will lead the front-of-house team and work closely with culinary leadership to maintain exceptional dining experiences.

You will oversee staffing, training, scheduling, payroll, and inventory while driving revenue, cost controls, and guest satisfaction in a high-volume resort setting. This role requires strong leadership and English fluency.

Qualifications

  • Minimum of two years of Food & Beverage management or supervisory experience in a restaurant, hotel, resort, or comparable hospitality environment.
  • Previous experience leading front-of-house restaurant operations strongly preferred.
  • Minimum of two years of experience hiring, training, coaching, and developing team members preferred.
  • Experience working in a high-volume restaurant environment preferred.
  • Excellent written and verbal communication skills; fluency in English required.
  • High school diploma or equivalent required; college coursework or degree in Hospitality, Food & Beverage Management, or a related field preferred.
  • Proficiency with POS systems, inventory management systems, and Microsoft Office.

Responsibilities

  • Support the Restaurant General Manager in the daily operation of Redfish Grill.
  • Provide hands-on leadership, direction, and support to front-of-house team members throughout each shift.
  • Ensure consistent execution of South Seas service standards and Redfish Grill's food and beverage concept.
  • Maintain a visible presence on the restaurant floor, engaging with guests and supporting the team during service.
  • Monitor the guest experience and respond promptly and professionally to guest questions, requests, concerns, and service recovery opportunities.
  • Assist with scheduling and staffing to ensure appropriate coverage based on business levels while effectively managing labor costs.
  • Monitor payroll and labor performance and assist in achieving established productivity goals.
  • Lead daily pre-shift meetings and communicate menu updates, specials, service expectations, resort information, and other operational priorities.
  • Assist with recruiting, interviewing, onboarding, training, coaching, and developing Food & Beverage team members.
  • Ensure new team members receive appropriate departmental orientation and training to successfully perform their roles.
  • Provide ongoing coaching and development to reinforce service standards and guest expectations.

POSITION OVERVIEW

The Assistant Restaurant Manager – Redfish Grill supports the Restaurant Manager in overseeing the daily operations of Redfish Grill at South Seas. This position plays a key leadership role in delivering an exceptional dining experience while maintaining high standards of guest service, food and beverage quality, operational efficiency, cleanliness, and team performance. The Assistant Restaurant Manager provides hands-on leadership to the front-of-house team and assists with staffing, scheduling, training, payroll and labor management, guest satisfaction, inventory, cost controls, and overall restaurant performance. This position works closely with the Restaurant General Manager and culinary leadership to ensure consistent execution of service standards and an exceptional experience for every guest. The Assistant Restaurant Manager will also contribute to the continued development of Redfish Grill by identifying opportunities to enhance service, improve operational efficiency, drive revenue, and support the overall success of the restaurant.

ESSENTIAL FUNCTIONS & RESPONSIBILITIES
  • Support the Restaurant General Manager in the daily operation of Redfish Grill.

  • Assist with employee performance management and ensure company policies and procedures are administered fairly and consistently.
  • Assist with annual performance reviews and ongoing employee feedback.
  • Ensure required employee training and certifications remain current.
  • Partner closely with culinary leadership to ensure timely, accurate, and consistent food and beverage service.
  • Monitor food and beverage sales trends, inventory, supplies, and operating costs.
  • Assist with inventory management, purchasing, receiving, and maintaining appropriate product and supply levels.
  • Support initiatives designed to increase restaurant revenue, improve productivity, enhance the guest experience, and control operating expenses.
  • Maintain established standards for restaurant cleanliness, sanitation, organization, safety, and presentation.
  • Ensure compliance with applicable food safety, sanitation, alcohol service, and health regulations.
  • Assist in maintaining required Florida health and safety standards and ensuring inspections and related requirements are completed timely.
  • Communicate and execute departmental and resort emergency procedures.
  • Maintain effective communication and positive working relationships with culinary leadership, Food & Beverage leadership, resort departments, and team members.
  • Perform additional duties as assigned based on business and operational needs.
What are we looking for? POSITION REQUIREMENTS

  • Valid driver's license required; a motor vehicle background check will be conducted.
  • Alcohol Awareness Certification in accordance with applicable state regulations.
  • Must meet applicable age requirements for serving and/or selling alcoholic beverages in the State of Florida.
  • Food Handler Certification in accordance with applicable state regulations.

WORKING CONDITIONS / PHYSICAL REQUIREMENTS
  • Ability to work in a fast-paced, deadline-driven restaurant environment.
  • Ability to stand and walk for prolonged periods.
  • Ability to lift and carry up to 40 pounds.
  • Ability to work in varying environmental conditions, including high temperatures and humidity, when operational needs require.
SCHEDULE REQUIREMENTS

Managers are expected to maintain flexible availability based on business needs, including evenings, weekends, and holidays. This position may require working more than 40 hours per week and responding to emergencies or unplanned operational needs when necessary.
