YOUR POSITION

Reports to the Restaurant Manager, relieves the Restaurant Manager, and is relieved as per vacation schedule.

WHAT YOU NEED TO DO
  1. Provide friendly, efficient, and professional service in all Food and Beverage venues and areas onboard.
  2. Master the restaurant manager’s role, relieve, and perform in that position.
  3. Train and assist all restaurant/bar team members.
  4. Guide and assist all restaurant/bar team members during service.
  5. Ensure dietary requests are fulfilled and inform guests of their choices at every meal.
  6. Welcome and say goodbye to all guests visiting any venue.
  7. Take food and drink orders and deliver them as per Uniworld standards and HACCP cleanliness and hygiene procedures.
  8. Explain the menus and all listed beverages, as per set recipes and standards.
  9. Organize your work and manage your times according to daily program times, events, and daily assigned schedules.
  10. Be in charge of the entire food and beverage service in a section of the restaurant, event, or bar.
  11. Take care of cleanliness of glassware, china, and cutlery; cleanliness, tidiness, and hygiene of the entire department, including directed parts on the sundeck, pantries, back office, and workrooms as per guidelines.
  12. Store food and beverage supplies and equipment as per procedures and cooperate in stock inventories.
  13. Minimize and keep track of breakage.
  14. Handle food and beverage supplies, other working materials, and use and maintenance of equipment according to guidelines.
  15. Report all defect materials, equipment, and premises damage to the Front Desk and Restaurant Manager.
  16. Take part in loading supplies for the ship and in luggage distribution if scheduled.
  17. Own and immediately report special requests and complaints to the Restaurant Manager.
  18. Be the lead on training restaurant/bar team members.
  19. Participate in preparing the ship at the end of the season for the start of the next season.
  20. Contribute to meetings and briefings.
  21. Practice the “Up serve” approach – increasing the cruise experience for guests along with the impact on onboard profit targets set by GRC.
  22. Comply with maximum working hours per day/week/month given by law and announced by GRC, and ensure that accurate records are taken.
  23. Assist with other department duties when requested by your supervisor.
  24. Participate in any learning activities, trainings, programs, safety, and emergency drills.
WHAT YOU NEED TO KNOW
  1. Luxury food and beverage skills gained in four- and five-star operations in hotels and/or ships.
  2. Best practices and trends in the food and beverage world.
  3. Leadership skills.
  4. English language.
