Job summary

Glory Days Grill is seeking an Assistant Kitchen Manager to lead a hourly kitchen team, serve as Kitchen Manager on Duty when KM is absent, and fill cook roles as needed to run a smooth kitchen operations. You will mentor staff, ensure timely line checks, and support cost control and sanitation.

The AKM will oversee safety, inventory, and ordering, while coordinating with KM to maintain quality standards and guest satisfaction in a bustling sports-themed restaurant setting.

Qualifications

• Extensive knowledge of professional cooking and knife handling.
• Broad understanding of safety, sanitation, and food handling procedures.
• Previous supervisor experience and strong communication skills.
• Willingness to work any shift and all holidays.
• Ability to take direction and work in a team.
• Ability to coach and develop talent and mentor Line Cooks.
• Calm, work well under pressure, and multi-task.
• Commitment to quality service and food knowledge.
• Serve Safe certification current or achievable within 6 months.

Responsibilities

• Maintain personnel files for all hourly kitchen team members.
• Ensure high levels of food quality, presentation and cost control.
• Expedite the line during peak periods with expediter to keep tickets low.
• Follow recipe and product specifications for food prep and serving.
• Supervise and ensure recipe adherence by all team members during shifts.
• Operate kitchen equipment safely (choppers, mixers, slicers, steamers, grills).
• Control food waste, loss and usage.
• Assist KM with sanitation and cleanliness of kitchen areas.
• Assist KM in hiring, development and coaching to reduce turnover.
• Place food orders according to pars set by KM.
