Job summary

Glory Days Grill in Florida seeks an Assistant Kitchen Manager to lead the hourly kitchen team and assist the Kitchen Manager to ensure daily readiness and top-quality guest experiences.

As second in command, you will fill cooking roles, supervise line checks during rush, manage sanitation and waste, and mentor team members to uphold standards.

Strong leadership, flexibility for all shifts and holidays, and Serve Safe manager-level certification within six months are required.

Qualifications

• Extensive understanding of professional cooking and knife handling.
• Extensive understanding and knowledge of safety, sanitation, and food handling procedures.
• Previous supervisor experience and professional communication skills required.
• Available to work any shift and all holidays.
• Ability to coach and develop talent and mentor line cooks.
• Serve Safe certification is required within 6 months of joining; attain manager level within Serve Safe system.

Responsibilities

• Maintain personnel files for all hourly kitchen team members.
• Ensure high levels of food quality, presentation and cost control.
• Expedite the line during peak periods and work with expediter to maintain low ticket times.
• Follow recipes and product specifications for preparing, seasoning, cooking, tasting, slicing, storing and serving food.
• Supervise and ensure recipe adherence and product specifications by all team members.
• Safely operate a variety of kitchen equipment.
• Control food waste, loss and usage.
• Assist Kitchen Manager with sanitation and cleanliness of kitchen and related areas.
• Assist Kitchen Manager in hiring, development and coaching of team members to reduce turnover.
• Place all food orders in accordance with pars set by Kitchen Manager
• Conduct weekly inventory of all food and paper items
• Act as Kitchen Manager in KM's absence and lead by example.
