Job summary

Altstadt Brewery in Fredericksburg, TX seeks an Assistant General Manager to lead a high-volume hospitality operation and drive guest experience across restaurant, taproom, and events. Qualifications

• 3+ years of experience in an Assistant General Manager or equivalent senior hospitality leadership role.
• Experience leading a high-volume or highly seasonal operation.
• Restaurant leadership experience or meaningful event, banquet, hotel, or venue operations experience.
• Strong understanding of labor management, scheduling, forecasting, financial performance, and inventory controls.
• Proven ability to coach, train, develop, and retain team members and emerging leaders.
• Ability to evaluate talent and contribute to hiring and onboarding processes.
• Experience with weddings, private events, corporate events, banquets, large groups, or live entertainment is strongly valued.
• Excellent communication, organization, judgment, and follow-through.

Altstadt Brewery is looking for an exceptional Assistant General Manager to help lead one of the Texas Hill Country's most distinctive, high-volume destination hospitality operations.

This is not a role for someone who simply wants to manage a shift. We are looking for a coach, operator, and culture-builder who can lead from the floor, support a strong team, and prepare a complex operation for major swings in seasonal and weekend volume.

Our 52,000-square-foot destination brings together a restaurant, taproom, grand hall, beer garden, ceremony garden, live music, weddings, corporate gatherings, private events, and award-winning German-style beer. The right leader will be energized by a business where preparation, event execution, hospitality, and attention to detail all matter.

Growth opportunity: This role serves as a key operational partner to the General Manager and offers a potential path to a future General Manager opportunity for a high-performing leader.

What You'll Do

• Partner closely with the General Manager and leadership team to support day-to-day operations and run the building when the General Manager is not on-site.
• Lead front-of-house operations while partnering closely with kitchen leadership and the broader salaried management team.
• Coach, develop, and hold team members accountable through clear expectations, consistent follow-through, and supportive leadership.
• Prepare the operation for significant seasonal, weekend, holiday, live-music, and event-driven volume.
• Support forecasting, scheduling, staffing, and labor planning based on expected business levels and event activity.
• Oversee execution across multiple guest spaces, including the restaurant, taproom, grand hall, beer garden, ceremony garden, and event areas.
• Support weddings, corporate events, private events, buyouts, large groups, and other special-event programming.
• Manage wine and beverage ordering and monthly beverage inventory responsibilities.
• Drive sales, profitability, labor efficiency, inventory control, cost management, and operational excellence.
• Maintain high standards for food quality, service, cleanliness, safety, and the overall guest experience.
• Analyze operational and financial results and translate them into practical actions for the team.
• Help strengthen training programs, on-the-job development, standard operating procedures, and other systems that improve consistency.
• Participate in recruiting, interviewing, onboarding, coaching, and retention efforts as needed.
• Represent the Altstadt brand and values with team members, guests, event partners, and the local community.

The Leader We're Looking For

Leads from the front. You are visible, hands-on, and comfortable being in the middle of the operation when volume increases.

Coaches instead of commands. You teach, support, challenge, and develop people while maintaining clear accountability.

Understands event-driven hospitality. You can prepare teams and spaces for weddings, private events, live music, large groups, and major weekend volume.

Plans before the rush. You understand how forecasting, scheduling, staffing, and pre-shift preparation shape execution.

Understands the numbers. You are comfortable with labor, food and beverage costs, sales, productivity, inventory, and profitability.

Improves systems. You look for practical ways to strengthen training, SOPs, communication, and operating routines.

Keeps high standards without creating a high-drama culture. You address problems, notice details, and help the team solve issues together.

Wants to grow. You are motivated by the opportunity to become a stronger operator and potentially advance into General Manager leadership.

What You'll Bring

• 3+ years of experience in an Assistant General Manager, General Manager, or equivalent senior hospitality leadership role.
• Experience leading a high-volume or highly seasonal operation.
• Restaurant leadership experience or meaningful event, banquet, hotel, or venue operations experience.
• Strong understanding of labor management, scheduling, forecasting, financial performance, and inventory controls.
• Proven ability to coach, train, develop, and retain team members and emerging leaders.
• Ability to evaluate talent and contribute to hiring and onboarding processes.
• Experience with weddings, private events, corporate events, banquets, large groups, or live entertainment is strongly valued.
• Excellent communication, organization, judgment, and follow-through.
• Reliable transportation and the ability to work the required on-site schedule in Fredericksburg.

Schedule and Work Environment

• Primary schedule is Wednesday through Sunday, with Mondays and Tuesdays generally off.
• Approximately 40-45 hours per week, based on business needs and seasonal volume.
• Availability for nights, weekends, holidays, peak tourism periods, and other major events is required.
• This is a fully on-site leadership role in Fredericksburg, Texas.

Compensation and Benefits

• Base salary of $65,000-$70,000.
• Quarterly performance bonus opportunity of up to 6% of annual salary, based on balanced scorecards and operating metrics. With additional quarterly incentive opportunities tied to event sales.
• Employer-paid employee medical coverage; dependent coverage is available at an additional cost.
• 401(k) matching after one year of service.
• Three weeks of PTO for salaried employees, accruing from day one and available for use after 90 days.
