Assistant Food Service Manager, Missouri School for the Deaf

Salary: $33,384 annually

A 9-month (paid 12 months), non-exempt, position assisting with the supervision of directing, preparing and serving of food.

This employee is responsible for assisting the Food Service Manager with training, planning and directing the preparation and service of foods. Work involves assisting with the application of basic dietetic principles in the planning of menus and for the supervision and proper training of all food service employees in the absence of the Food Service Manager. Supervision is received from the Food Service Manager; however, the employee generally exercises independence in supervising food service activities.

Assists with directing food service staff in the preparation, cooking and service of meals.

• Assists with planning menus according to basic dietetic rules and guidelines set by the Department of Elementary and Secondary Education Food Service (DESE).
• Ensures compliance with USDA and federal nutritional regulations for school programs.
• Ensures compliance with food safety requirements.
• Maintains close liaison with storeroom personnel and participates in long-range planning for the ordering and storage of food, supplies and equipment.
• Requisitions daily adequate quantities of food and supplies for preparation of meals sufficiently in advance of needs as requested by the Food Service Manager.
• Ensures food ordered from various vendors.
• Supervises the maintenance of health, sanitation and safety conditions in kitchens, dining rooms, and other food preparation and storage areas.
• Involved with the training and instruction of new employees and others in their food service duties.
• Assists with compiling data/reports/forms and provides information to DESE in a timely manner as required.
• May assist with keeping record of time worked by employees, managing personnel in accordance to policy & procedures of MSD and/or DESE.
• Keeps records and prepares reports on costs and amounts of foodstuffs requisitioned and served.
• Maintains inventory.
• Works with the Food Service Manager and staff from other sections on food service needs for athletic trips, field trips and school/residential programs.
• Performs related duties as assigned.

Knowledge, Skills, and Abilities:

Comprehensive knowledge of materials, methods, equipment and appliances used in large-scale food preparation.

• Intermediate knowledge of modern principles and practices of kitchen management.
• Intermediate knowledge of food values, nutrition, and special diets.
• Intermediate knowledge of food safety and the ability to keep up to date with federal nutritional requirements for school programs.
• Ability to lift and move up to 50 pounds.
• Ability to learn the process of planning menus for a large-scale food production and to direct quantity cooking with economy and efficiency, including determining supply and demand.
• Ability to estimate in advance the food requirements of a large number of persons.
• Ability to plan, coordinate and direct the work of a staff in food service operations.
• Ability to establish and maintain effective and harmonious working relationships with students, staff and fellow workers.
• Ability to keep accurate records of food use and to prepare reports of such use and maintain accurate inventory.
• Ability to meet the American Sign Language competency level of Novice.

Qualifications:

Associate’s degree from an accredited college or university.

OR

Three or more years of commercial, industrial, school or institutional cooking experience.
