Job summary

MGM Resorts International in Las Vegas invites an experienced Assistant Beverage Manager to lead beverage operations across Mandalay Bay lounges. You will shape menus, mentor bartenders, control costs, and ensure world-class guest service in a vibrant hospitality setting.

The role prefers 2+ years in mixology and management within bar or lounge environments, must be 21+, and will collaborate across teams to deliver WOW experiences while upholding our brand standards.

Qualifications

• High School Diploma or GED required.
• Must be 21 years of age or older.
• 2+ years of beverage experience required.
• 2+ years of mixologist experience in lounge/nightlife preferred.
• Previous management experience in F&B preferred.
• Experience managing staff under a Collective Bargaining Agreement preferred.

Responsibilities

• Manage assigned operational functions within the department aligned with the strategic vision.
• Direct smooth, cost-efficient operations including labor, scheduling and inventory control.
• Oversee guest service delivery within the department to meet brand standards.
• Provide management support to ensure quality service during shifts.
• Coordinate requisitions and stocking of beverage outlets to maximize revenue.
• Offer guidance to beverage staff and ensure proper scheduling.
• Provide recommendations to management on daily operational issues.

The Job

As an Assistant Beverage Manager for the Lounges at Mandalay Bay, you will be responsible for overseeing key operational functions within the department while setting the stage for an exceptional guest experience with your welcoming smile and premier service. By understanding our guests' unique stories and needs, you will own their experience to create WOW memories they will carry with them far beyond their stay with us, working seamlessly with your team to maintain our renowned hospitality standards. This role represents an amazing opportunity for an experienced mixologist, or a beverage professional with a strong mixology background looking to step into management, to elevate our beverage program by overseeing and developing innovative cocktail menus across all our lounge venues.

The Day-to-day

• Manage assigned operational functions within the department consistent with the strategic plan and vision for the department
• Direct smooth, efficient, cost effective operation, including labor management, supervision of all aspects of services, scheduling and inventory control
• Manage delivery and measurement of guest service within assigned department(s) consistent with the company’s core service standards and brand attributes
• Provide management support in the oversight of assigned shift to ensure the delivery of quality service to the guests
• Coordinate the requisition process and stocking of beverage outlets to maximize revenue for the division
• Provide guidance and counsel to beverage employees, ensure the staff is scheduled properly
• Provide recommendations to management on daily operational issues

The Ideal Candidate

• High School Diploma or GED required
• Must be 21 years of age or older
• Work Varied shifts, to include weekends and holidays required
• 2+ Years of Prior Relevant Beverage experience required
• 2+ Years of mixologist experience for a Lounge or similar Bar/Nightlife environment preferred
• Previous experience as a manager in Food and Beverage preferred
• Previous experience managing employees under a Collective Bargaining Agreement preferred
