The Louisiana Veterans Home in Monroe, LA is seeking a dedicated WAE/PRN Food Service Specialist to plan and direct daily food production, estimate needs, prepare and serve meals in accordance with menus and production schedules.

You will estimate ingredients, adjust recipes, supervise kitchen staff, and ensure safety and quality standards. The role is classified as WAE/PRN with a premium pay of $1.00 per hour for hours worked, located in the Dietary Department of the Northeast LA Veterans Home.

Competenze

• At least one year of food service experience or equivalent training.
• Ability to estimate food needs, plan, and adjust recipes.
• Knowledge of safety and sanitation in a kitchen.

Mansioni

• Serve as an advanced-level cook.
• Estimate ingredients and requisition supplies; receive and distribute supplies to subordinates.
• Plan and direct the preparation of foods for immediate consumption and future use.
• Report unsafe conditions and defective equipment to supervisors.
• Oversee assistants in mixing, kneading, and preparing baked goods.
• Inspect bakery supplies for conformance to specifications and quality.
• Assume responsibility for the preparation and production of all baked items per menus from registered dietitians.
• Calculate and adjust recipes to production requirements and weigh ingredients accurately.
