The Louisiana Veterans Homes is seeking a dedicated WAE/PRN Food Service Specialist to plan and direct food preparation, estimate needs, and adjust recipes for production requirements in the Northeast LA Veterans Home in Monroe, Louisiana.

The role requires at least one year of food service experience or related training; it also involves supervising kitchen staff and ensuring quality baked goods produced under dietary plans. Premium pay of $1.00 per hour is included.

Competenze

• One year of food service experience in a food service operation.
• One year of training in food technology, food service management, or in a food service-related curriculum in a trade school or technical institute.
• Twelve semester hours in food and nutrition, dietetics, food service preparation, home economics, or hotel, food service, restaurant, or institutional management.

Mansioni

• Serve as an advanced-level cook.
• Estimate food needs and requisitions, receive, and distribute food supplies to subordinate cooks.
• Plan and direct the preparation of foods for immediate consumption and the preservation of foods for future use.
• Report to supervisors any unsafe working conditions and defective equipment.
• Oversee assistants in mixing, kneading, and preparing bread, rolls, biscuits, cakes, and pastries.
• Estimate ingredients and requisition supplies; receive and distribute supplies to subordinates.
• Inspect bakery supplies for conformance to specifications and assess quality and adherence to required quality.
• Assume complete responsibility for the preparation and production of all baked items in accordance with menus prepared by registered dietitians.
• Calculate and adjust recipes according to production requirements and accurately weigh and measure all ingredients to ensure conformity of products.
