Job summary

Leech Lake Gaming is seeking a dedicated line cook for Leech Lake Bakery to produce a variety of baked goods and ensure food quality for guests and staff.

The role requires independent work, early morning shifts, adherence to recipes and sanitation, training new staff, and compliance with tribal and state licensing.

Qualifications

• Education: High School Diploma or GED; ServSafe preferred.
• Two years baking experience preferred.
• Must meet Tribal/State licensing, pass background check and drug test.

JOB DESCRIPTION: Responsible for providing the highest quality food products for all guests and employees at the Leech Lake Bakery.

ESSENTIAL FUNCTIONS

RESPONSIBILITIES

• Creates a variety of baked goods independently or through menu and recipe interpretation.
• Demonstrates knowledge of all bakery items, cooking procedures and handling of all food products.
• Responsible for following recipes, cooking times and temperatures according to the guidelines set by management.
• Consistently practice all procedures for food storage, rotation, spoilage, sanitation and the prevention of cross-contamination
• Delivers exceptional internal and external guest service standards.
• Learns and understands menu and food preparation.
• Meets or exceeds kitchen sanitation standards
• Trains new employees in food preparation, food storage, sanitation and the prevention of cross-contamination.
• Cleans and maintains all equipment used in the Bakery.
• Maintains knowledge of all events in the property as a whole.
• Attends and/or facilitates all mandatory meetings and training.
• Maintains confidentiality at all times.
• Is sensitive to Native American Culture.
• Operates within the parameters of the Leech Lake Gaming Human Resource Policy, Departmental Policy Manual and all Tribal Internal Controls (TICs), and all other applicable regulations.
• Secures the assets of Leech Lake Gaming and the Leech Lake Band of Ojibwe.
• Performs other duties as assigned.

Position Requirements

KNOWLEDGE, SKILLS, AND ABILITIES:

POSITION REQUIREMENTS:

• Possess knowledge of food quality standards and understanding of service and atmosphere as they relate to the line cook position.
• Ability to work independently.
• Must be dependable and reliable.
• Working knowledge of food service equipment and utensils.
• Knowledge of federal and state sanitation guidelines.

PHYSICAL REQUIREMENTS:

• Able to work early morning hours.
• Physically capable of remaining on feet for long periods of time.
• Subject to internal working conditions.
• Must be able to lift up to 50 lbs.

EDUCATION AND SKILLS:

Education Preferred: High School Diploma or General Education Equivalency (GED), ServSafe Certification.

Education Preferred: Culinary and / or baking coursework.

Experience: Minimum of two years baking preferred.

Computer Skills: Minimal computer skills required

Certificates & Licenses: Must meet Tribal/State compact licensing requirements, pass criminal background check and submit to drug testing.
