Job summary

The Peninsula Hotels in Istanbul, Fatih district, seeks a seasoned Restaurant Director/General Manager to oversee the restaurant, bar, terrace and private dining spaces in partnership with the Gallada Head Chef.

Ideal candidates have 8–10 years in high‑end restaurant management, strong financial acumen, and fluent Turkish and English; you will drive guest experience, manage reservations, and mentor a diverse team.

Qualifications

• 8–10 years of experience in domestic and overseas restaurants at high standards in a similar role.
• Detail-oriented with the ability to project manage a large restaurant and bar operation with high volume.
• Experience in managing fine dining establishments as well as market leading bar and bespoke events.
• Experienced in all beverage related operation, wines and cocktail program.
• Fluent in Turkish & English.

Responsibilities

• Plan, lead and guide all aspects of the restaurant, bar, terrace, private dining spaces in conjunction with the Gallada Head Chef.
• Liaising with Chef Director, EAM Food and Beverage and Director of Brand Marketing and Communications in designing and developing the restaurant and bar’s marketing and promotion strategies.
• Develop and execute strong strategies to elevate guest experience.
• To carry full responsibility in meeting the financial targets of the business units.
• To streamline processes and to increase productivity.
• Ensuring customer feedback is communicated throughout the Food and Beverage and Culinary Departments to create an environment where the customer is at the center.
• Ensuring restaurant expectations are well communicated to the team and constantly observed to ensure full adherence.
• Following up and ensuring reservations, VIP bookings and requests are personally managed and openly communicated with the team.
• Coaching, mentoring and guiding staff to achieve high performance in all phases of service and job functions by ensuring staff retention and high engagement.
