Job summary

Robata Akari in Singapore is seeking a Senior Chef to lead our Japanese robatayaki kitchen. You will oversee the preparation of robatayaki and charcoal-grilled dishes, ensure food quality, taste, presentation, and consistency, and train the kitchen team for efficient daily operations.

The ideal candidate has proven leadership as a Senior or Sous Chef, with strong knowledge of Japanese cooking techniques and food safety.

Qualifications

• Proven experience as a Senior Chef or similar leadership role.
• Experience in Japanese cuisine highly preferred.
• Knowledge of robatayaki and charcoal grilling is an advantage.
• Strong leadership, communication, and team management skills.
• Good knowledge of food safety, kitchen hygiene, and inventory control.
• Able to work evenings, weekends, and public holidays.

Responsibilities

• Prepare and oversee the preparation of Japanese dishes, with a focus on robatayaki and charcoal-grilled items.
• Ensure food quality, taste, presentation, and consistency meet the restaurant's standards.
• Lead, supervise, and train kitchen team members to maintain efficient daily operations.
• Develop new dishes and contribute creative ideas for seasonal menus and daily specials.
• Monitor food costs, portion control, stock levels, and ingredient usage to minimise wastage.
• Manage food preparation, kitchen inventory, ordering, and receiving of ingredients.
• Ensure proper food storage, hygiene, sanitation, and compliance with food safety regulations.
• Coordinate closely with the Restaurant Manager and Front-of-House team to ensure smooth service.
• Maintain a clean, organised, and well-managed kitchen environment.
• Take responsibility for kitchen performance and support continuous improvement in food quality and operational efficiency.
