About the role
We're looking for an experienced Chef specialising in Indian cuisine to take charge of our kitchen - cooking our core menu to a consistent standard, leading the kitchen team through service, and keeping quality, hygiene and food cost under control. This is a hands-on cooking role, not a supervisory one from the pass: you'll be on the line every service.
Key responsibilities
- Prepare and cook our full menu to recipe and to a consistent standard - biryanis, tandoor items, North and South Indian curries, breads, starters and sides
- Manage the tandoor: marination, skewering, cooking temperatures and timing for kebabs, tikkas, naans and rotis
- Execute dum biryani to spec - rice quality, layering, sealing, dum timing and portioning
- Prepare masala bases, gravies, marinades and chutneys in-house, with consistent spice balance from batch to batch
- Adjust for guest requests - spice levels, vegetarian, no-onion-no-garlic, allergies - without compromising the dish
- Taste and check every dish before it leaves the kitchen
- Lead and roster the kitchen team through lunch and dinner service, including kitchen assistants and commis
- Plan daily prep lists and make sure the kitchen is ready before each service
- Train staff on recipes, knife skills, plating and portion control
- Coordinate with front-of-house on order timing, takeaway packing and delivery pickups
About you
- Minimum 3-5 years' experience cooking Indian cuisine in a restaurant, hotel or high-volume kitchen
- Strong command of both North-Indian and South-Indian cooking, including tandoor and dum biryani
- Able to work independently
- WSQ Food Safety Course Level 1 (Basic Food Hygiene), or willing to obtain it on joining
- Physically fit - long hours standing, lifting up to 20kg, working in a hot kitchen
- Available for weekends, public holidays and split shifts on a roster
- Legally able to work in Singapore (Singaporean, Permanent Resident, or holding a valid work pass)
Benefits
- Salary: S$3000 to S$3500 per month (based on experience), plus incentive
- Staff meals provided on every shift
- CPF contributions and annual leave as per MOM guidelines
- Medical leave and coverage as per Employment Act
- Real input into the menu and specials - we want a chef with ideas, not just a pair of hands
