Qualifications

• Diploma, certificate, or equivalent professional training in Culinary Arts or related field.
• Proven experience in cold kitchen production, including canapés, buffet selections, and Western sit-down menus.
• Strong knowledge of food hygiene, food safety, allergen management, and temperature control.

Responsibilities

• Oversee preparation, production, and presentation of cold kitchen items for events.
• Develop new dishes and improve existing recipes to meet client requirements.
• Plan production and allocate manpower for peak periods.
• Train junior chefs in plating, food handling, portion control, and workplace discipline.
• Monitor food hygiene, allergen management, and temperature controls.
• Control food costs, wastage, and stock rotation using FIFO/FEFO.
