Job summary

voco Orchard Singapore is seeking a dedicated and meticulous Assistant Hygiene Manager to lead hygiene and food safety across the hotel, ensuring full compliance with statutory requirements via a robust Food Safety Management System.

You will collaborate with F&B and Housekeeping, organize internal inspections, manage audits and testing schedules, and drive continuous improvement in HACCP and ISO 22000 frameworks.

Qualifications

• Diploma in Food Science, Food Technology, or equivalent.
• 3–4 years of related experience in hygiene or food safety within hospitality.
• Familiar with Singapore hygiene legislation and government authorities.
• Experience establishing and implementing FSMS, HACCP and ISO 22000.
• Experience in conducting internal audits and reporting.
• Strong knowledge of F&B operations and cleaning chemicals.
• Excellent communication and collaboration across departments.
• Proficiency in Microsoft Excel.

Responsibilities

• Lead hygiene-related activities hotel-wide and ensure compliance through a robust Food Safety Management System.

• Lead and organise regular internal hotel inspections, including F&B areas, to assess hygiene conditions.

• Record and implement corrective actions for failed sample results.
• Assist F&B management in investigating food safety-related feedback.
• Train new joiners and staff through hygiene and food safety sessions (RSPH training, Ecolab training).

Your day to day

voco Orchard Singapore is seeking a dedicated and meticulous Assistant Hygiene Manager to join its team. As an Assistant Hygiene Manager, you will be the lead in maintaining the highest standards of cleanliness and hygiene throughout the hotel. You will oversee all hygiene-related activities, ensuring compliance with statutory requirements through a robust Food Safety Management Management System.

Responsible Business

• Collaborate with the F&B and Housekeeping teams to identify hygiene-related risks within the hotel's operations.
• Provide strategic advice on resource allocation to address the highest-risk areas.
• Implement and enforce action plans to ensure compliance with hygiene and food safety legislation, aligning with the hotel’s hygiene and food safety objectives.
• Lead and organize regular internal hotel inspections, including F&B areas, to assess hygiene conditions.
• Prepare and disseminate internal audit reports and recommend corrective actions for non-conformance, if any.
• Establish a regular monthly schedule for bacteriological and chemical testing of food and water samples.
• Record and implement corrective actions for failed sample results, if any.
• Assist F&B management in investigating food safety-related feedback, if any.
• Support management in verifying adherence to hygiene and food safety practices, policies, and procedures.
• Continuously monitor and update the Food Safety Management System.
• Facilitate hotel visits from local government officials or other organizations related to food safety, hygiene, and pest control.
• Ensure the effectiveness of all HACCP/Food Safety Management System documentation and procedures, especially in response to food safety feedback.
• Conduct and host monthly HACCP meetings to review the performance and improvement of the Food Safety Management System.
• Verify and review follow-up actions by various departments to ensure they align with recommendations from internal audits, third-party audits, and inspections by government officials, if any.
• Conduct and coordinate hygiene and food safety briefings and training sessions for new joiners and current employees. Liaise with external trainers for relevant training programs such as RSPH food safety training and Ecolab chemical training, etc.
• Any other duty as assigned by your reporting officer.

What You Bring

• Diploma in Food Science, Food Technology, or equivalent experience in Hygiene & Food Safety.
• Minimum 3-4 years of related experience in a similar capacity, perferably within the hospitality industry.
• Familiar with all the hygiene-related legislation in Singapore and experience working closely with the relevant government authority.
• Experience in establishing and implementing of Food Safety Management System (FSMS), HACCP and ISO 22000.
• Experience in conducting internal audit and reporting.
• Strong working knowledge in F&B operations, cleaning chemicals, kitchen and service equipment.
• Excellent Interpersonal and communication skills to drive and influence various stakeholders.
• Proficiency in Microsoft Office applications, particularly Excel.
• Strong organisational, administrative and analytical skills.
• Good communication and interpersonal skills with the ability to work collaboratively across departments.
• Ability to prioritise tasks and meet deadlines in a fast-paced environment.
• Must speak fluent English
