Job summary

Pan Pacific Orchard in Singapore is seeking an Assistant Chief Steward with a strong background in hotel hygiene management and high-volume banqueting. The role oversees cleanliness in front and back-of-house areas, coordinates rosters, and collaborates with Outlet Chefs to uphold top sanitation standards.

Candidates should have at least 3 years in large hotels and possess Food Hygiene Certificates and HACCP certificates.

Qualifications

• At least 3 years of experience in large hotels, high-volume banqueting.
• Food Hygiene Certificate and HACCP certificates are required.
• Ability to schedule rosters and manage manpower efficiently.
• Strong HACCP or equivalent sanitation knowledge.

Responsibilities

• Ensure hygiene and operating equipment meet hotel standards.
• Implement and comply with a business plan for F&B equipment expenses.
• Actively participate as a Food & Beverage team member.
• Coordinate with Outlet Chefs for assigned sections (Cafe, Specialty, Bakery, Banquet Kitchen).
• Schedule rosters for Stewarding staff and ensure efficient manpower use.
• Supervise associates to maintain hygiene and sanitation standards.
• Coach staff and develop necessary skills.
• Discuss quality factors with Chief Steward and Executive Chef for corrective actions.
• Oversee cleaning activities to ensure high standards in all outlets and events.
• Ensure cleanliness and quality of all operating equipment in restaurants, bars and events.
• Communicate hotel strategies to the team where appropriate.
• Conduct supplier audits and regular tracking.
• Perform hygiene audits with Outlet Chef in charge area.
• Maintain sanitation certifications as required by authorities.
• Ensure courteous and professional service at all times.
