Job summary

The Old Course Hotel, Golf Resort & Spa, part of the Kohler Company, is seeking a Senior Chef de Partie to join our Nights team in a permanent Main Kitchen role. You will craft refined dishes from the finest Scottish produce and oversee your own section while advancing under a supportive leadership team.

We seek candidates with solid culinary knowledge, at least two years’ experience, and the ability to work across all kitchen stations in a fast-paced luxury hotel.

Qualifications

• A solid knowledge of culinary terminology and techniques.
• Ability to work as part of a team in a kitchen environment.
• SVQ 1 & 2, MVQ or equivalent.
• Ability to work all stations of the kitchen.
• Minimum of 2 years of culinary experience.

Responsibilities

• Prepare all foods necessary for service to the demonstrated culinary standards and according to forecast quantities.
• Maintain established pace of service during food preparation.
• Prepare all dietary requirements in foods requested as part of our customer-focused directives.
• Ensure foods do not fall in the temperature danger zone during storage, preparation or service.
• Sanitise cutting boards and utensils after handling raw meat, fish or poultry.
• Maintain knife safety standards during orientation.
• Know how to assemble, disassemble and clean all equipment within your duties.
• Work independently to service guests during the night in a 24-hour kitchen.
• Set up breakfast MEP for the breakfast service team.
