Job summary

The Old Course Hotel, part of Kohler Co., is seeking a Chef de Partie to join the Road Hole Restaurant team in a 3 AA Rosette kitchen with stunning views over the Old Course. You will own your kitchen section, ensure high quality, and mentor junior staff in a luxury resort setting.

We offer a competitive salary (£31,769.40 per annum) with tronc, overtime, and a comprehensive benefits package including meals, discounts, and wellness support.

Qualifications

• Previous experience as a Chef de Partie or Demi Chef de Partie in a quality hotel or restaurant.
• Sound knowledge of classical and modern cookery techniques.
• Strong understanding of food hygiene, HACCP and allergen legislation.
• Excellent organisation and time management skills.

Responsibilities

• Take ownership of the day-to-day operation of your assigned kitchen section.
• Prepare and cook dishes to the standards set by the Executive and Sous Chefs.
• Ensure all mise en place is completed to the required standard before service.
• Maintain exceptional standards of quality, presentation and portion control.
• Supervise, support and develop Demi Chef de Parties, Commis Chefs and apprentices.
• Assist with stock control, ordering and stock rotation procedures.
• Help achieve food cost targets through careful ordering and waste management.
• Ensure full compliance with HACCP, food safety and allergen regulations.
• Work collaboratively with kitchen and front of house teams to deliver seamless service.
• Promote a positive, professional and safety-focused working environment.
