Job summary

La Panetteria Di Luigi seeks a Store Operations & Standards leader to oversee multiple branches, ensuring quality, safety, and profitability with strict adherence to SOPs and regulatory standards. Responsibilities

  • Lead manpower planning, hiring, onboarding, and deployment of store personnel across all branches in coordination with HR.
  • Prepare staff schedules; ensure proper manning during peak hours, holidays, and promotional periods.
  • Conduct daily pre-shift briefings focused on targets, promos, product knowledge, and service expectations.
  • Design and deliver training programs on product knowledge, customer service, cashiering, food safety, barista and baking standards, grooming, and brand values.
  • Coach, mentor, and develop Store Leads and high‑potential crew members to take on larger responsibilities as new branches open.
  • Set performance expectations, conduct regular evaluations, give constructive feedback, and recognize top performers.
  • Enforce company policies, the Code of Conduct, grooming standards, and house rules fairly and consistently.
  • Handle employee concerns, disciplinary issues, and due process in coordination with HR and the Owner / President.
  • Promote a culture of teamwork, accountability, hospitality, and continuous improvement across every branch.

Job description

A. Store Operations & Standards

Owns the quality, cleanliness, safety, and profitability of every branch. Ensures all stores run smoothly, consistently, and in full compliance with company and regulatory standards.

  • Supervise daily opening, mid-day, and closing operations across all branches and ensure each store is fully prepared for service.
  • Enforce product quality standards for all bakery, pastry, and cafe items; conduct regular taste, presentation, and portion checks.
  • Implement and audit Standard Operating Procedures (SOPs) for food preparation, display, service, cashiering, and cleanliness.
  • Uphold strict food safety, sanitation, and hygiene standards in line with FDA / LGU / DOH requirements; maintain valid permits and health cards of staff.
  • Monitor inventory levels of ingredients, packaging, and supplies; oversee requisitions, transfers, and proper FIFO stock rotation across branches.
  • Control food cost, beverage cost, wastage, and spoilage; investigate variances and implement corrective action.
  • Oversee daily cash handling, POS transactions, sales reconciliation, bank deposits, and safeguarding of store funds.
  • Ensure equipment (ovens, mixers, espresso machines, refrigeration, POS) is operational, properly maintained, and serviced on schedule.
  • Handle customer concerns, complaints, and escalations promptly, professionally, and with a service-recovery mindset.
  • Prepare and submit daily, weekly, and monthly operations reports — sales, inventory, labor, incidents, and action plans — to the Owner / President.
B. Store Development & Expansion

Partners with the Owner / President on opening new branches, improving existing stores, and scaling the brand without losing its identity.

  • Support site evaluation and branch feasibility — foot traffic, demographics, visibility, lease terms, and operational viability.
  • Coordinate with contractors, designers, and suppliers on store build-out, layout, equipment installation, and branding elements.
  • Develop and maintain the new-store opening (NSO) checklist and timeline — permits, utilities, licenses, equipment, manpower, and soft-launch plans.
  • Lead pre-opening hiring, orientation, training, and dry runs to ensure a smooth branch launch.
  • Build and refine operational playbooks, store manuals, and SOPs so every new branch can be opened using a repeatable, documented system.
  • Roll out operational improvements, new menu items, pricing updates, and brand standards uniformly across all branches.
  • Evaluate underperforming branches and recommend action plans — layout adjustments, menu tweaks, staffing, or marketing interventions.
  • Scout and recommend new revenue channels — catering, corporate accounts, bulk orders, kiosks, delivery platforms, and concessions.
C. Sales, Marketing & Promotions

Acts as the brand's on-the-ground marketer — driving top-line sales, growing customer loyalty, and keeping La Panetteria Di Luigi visible and loved in every community it serves.

  • Set and monitor sales targets per branch — daily, weekly, monthly, and seasonal — and drive the team to hit them.
  • Plan and execute promotions, product bundles, seasonal campaigns, and holiday offers (Christmas, Valentine's, Mother's/Father's Day, anniversaries, etc.).
  • Manage and grow the brand's social media presence (Facebook, Instagram, TikTok) — content calendar, product photos, promo posts, and customer engagement.
  • Partner with local schools, offices, churches, and community groups for tie-ups, sampling activities, and corporate orders.
  • Oversee loyalty programs, gift certificates, membership cards, and repeat-customer initiatives.
  • Coordinate with delivery platforms (GrabFood, Foodpanda, etc.) — menu accuracy, pricing, promo uploads, store ratings, and response times.
  • Monitor competitor activity, local pricing, and customer feedback; recommend adjustments to menu, pricing, and promos.
  • Ensure all in-store merchandising — menu boards, display cases, posters, signages, uniforms — reflect current campaigns and brand standards.
  • Analyze sales mix and top/bottom-moving items; recommend product rationalization and upselling tactics for the team.
D. People Leadership & Training

Builds a capable, disciplined, and engaged team that embodies the warmth and craftsmanship of La Panetteria Di Luigi.

Qualifications:

  • Food safety, sanitation, and basic occupational safety & health training — a strong plus.
  • At least 3–5 years of progressive supervisory or managerial experience in a bakeshop, cafe, QSR, casual dining, or retail food & beverage environment.
  • Proven experience handling multiple branches or multi-unit operations is strongly preferred.
  • Direct experience in new store opening (NSO), store development, or branch expansion is a strong advantage.
  • Hands‑on background in cashiering, inventory, and basic P&L management.
  • Strong leadership and people management skills with the ability to lead multi‑site teams.
  • Solid grasp of store operations, food safety, cost control, and customer service standards.
  • Sales‑driven and marketing‑savvy — comfortable planning promos and leveraging social media.
  • Organized, systems‑oriented, and able to build repeatable SOPs and checklists.
  • Excellent communication and coaching skills — in English and Filipino.
  • Proficient with POS systems, inventory tools, MS Office / Google Workspace, and basic reporting.
  • Analytical — can read sales, inventory, and labor reports and turn them into action.
  • High integrity, hands‑on, and willing to work on the floor alongside the crew when needed.
