You will monitor KPIs, analyze variances, and collaborate with corporate and property teams to drive performance and ensure accurate reporting using Business Central.

STRATEGIC PERFORMANCE REVIEW

• Analyze financial and operational performance across all managed F&B outlets and properties.

• Monitor key performance indicators including revenue, covers, average check, food and beverage cost, payroll, productivity, and profitability.

• Review MTD, YTD, budget, forecast, and prior-year performance to identify significant trends, gaps, risks, and opportunities.

• Provide data-driven insights and strategic recommendations to the Corporate Assistant Director of F&B and relevant stakeholders.

COST AND PROFITABILITY MANAGEMENT

• Review food cost, beverage cost, payroll, and operating expenses against budget, forecast, and prior year; identify significant cost drivers and unfavorable variances and recommend corrective actions.

• Analyze operational efficiency and productivity across managed F&B operations by evaluating indicators such as cost per cover, payroll productivity, and cost-to-revenue ratios.

• Collaborate with Corporate and Property Cost Controllers and F&B teams to develop and monitor cost and profitability improvement initiatives and measure their financial impact.

• Evaluate profitability and margin improvement opportunities and provide recommendations to strengthen overall F&B financial performance.

• Manage and monitor standardized recipes, ingredient specifications, yields, portions, and recipe costs to support accurate food costing, consistency, and effective cost control.

REVENUE, COMMERCIAL PERFORMANCE AND FINANCIAL PLANNING

• Evaluate revenue performance, menu mix, pricing, promotions, average check, contribution margins, and sales trends against budget, forecast, and prior year.

• Identify opportunities to improve revenue generation, product profitability, sales mix, and overall commercial performance.

• Support the F&B team in assessing the financial and commercial impact of new initiatives, promotions, packages, and revenue-generating strategies.

• Support the review of F&B budgets, forecasts, and business plans, including the evaluation of key revenue, volume, and cost assumptions.

• Monitor commercial initiatives and provide recommendations based on their financial performance and results.

PERFORMANCE, REPORTING AND ADMINISTRATIVE SUPPORT

• Consolidate and analyze monthly F&B financial and operational reports across all managed properties, ensuring accuracy, consistency, and timely submission for management review.

• Maintain and continuously update existing F&B performance dashboards while developing new dashboards and analytical tools that improve the speed, accuracy, and efficiency of performance analysis.

• Ensure relevant F&B data and performance information are readily available upon management request for review and decision-making.

• Monitor agreed performance improvement action plans and key deliverables, coordinate follow-ups with property teams and Cost Controllers, and track the financial and operational impact of initiatives.

• Prepare and consolidate reports, management presentations, action trackers, and other F&B performance-related deliverables as required.

• Utilize Business Central and extract relevant financial, operational, inventory, and F&B data for performance analysis, reporting, and management review.

PROPERTY SYSTEMS IMPLEMENTATION AND SUSTENANCE

• Provide guidance and coaching to property F&B teams on performance analysis, reporting dashboards, and data-driven decision-making.

• Conduct training and knowledge-sharing sessions to strengthen capability and ensure proper utilization of F&B performance tools and systems.

• Monitor adoption and compliance with established reporting and performance management practices, provide feedback, and promote accountability and continuous improvement across properties.

PEOPLE MANAGEMENT AND DEVELOPMENT

• Provide guidance and coaching to property F&B teams on performance analysis, reporting dashboards, and data-driven decision-making.

• Conduct training and knowledge-sharing sessions to strengthen the team’s understanding and proper utilization of F&B performance tools, reports, and dashboards.
