The Concept Development Chef is responsible for creating and developing innovative food concepts, menu offerings, and culinary experiences across The Bistro Group's restaurant brands. This role collaborates closely with Operations, Marketing, Supply Chain, and Training teams to conceptualize new products, enhance existing menu items, and ensure that all culinary innovations align with the company's brand standards, business objectives, and customer expectations.
Key Responsibilities
- Develop and conceptualize new menu items, seasonal offerings, limited-time promotions, and restaurant concepts.
- Conduct culinary research on local and international food trends, ingredients, cooking techniques, and dining experiences.
- Create standardized recipes, product specifications, plating guides, and preparation procedures.
- Lead menu innovation projects from concept development through testing, costing, and commercial launch.
- Conduct kitchen trials, recipe refinement, and product evaluations to ensure consistency, quality, and operational feasibility.
- Work closely with the Procurement team in sourcing ingredients and evaluating alternative products while maintaining quality standards.
- Collaborate with the Marketing team on product launches, promotional campaigns, food presentations, and creative initiatives.
- Partner with the Operations team to ensure new menu items are practical, efficient, and scalable across restaurant locations.
- Coordinate with the Training team in developing recipe manuals, training materials, and implementation programs for new menu launches.
- Monitor product performance and gather customer and operational feedback to continuously improve menu offerings.
- Ensure all recipes comply with food safety, sanitation, and company quality standards.
- Support brand expansion projects, new restaurant openings, and concept development initiatives as assigned.
Qualifications
- Bachelor's Degree or Diploma in Culinary Arts, Hospitality Management, or a related field.
- At least 5 years of progressive culinary experience, with 2–3 years in menu development, research and development (R&D), or concept creation, preferably in a multi-brand restaurant group.
- Strong knowledge of international cuisines, culinary techniques, and food presentation.
- Experience in recipe standardization, menu engineering, and food costing.
- Excellent understanding of kitchen operations and commercial food production.
- Creative mindset with a passion for culinary innovation and trend forecasting.
- Strong project management, communication, and collaboration skills.
- Proficient in Microsoft Office applications; experience with recipe management or menu development software is an advantage.
