We are seeking an experienced Chef de Partie for Japanese Cuisine to join our culinary team at Vikings Group of Companies in Makati City, Metro Manila. This is a full-time position that offers you the opportunity to showcase your expertise in Japanese cooking whilst leading a section of our kitchen. As Chef de Partie, you will be instrumental in maintaining the authenticity, quality and consistency of our Japanese dishes, working collaboratively with our head chef and kitchen brigade to deliver exceptional culinary creations to our valued guests.
Lead and manage your assigned section (station) of the Japanese kitchen, ensuring efficient workflow and adherence to service standards
Prepare, cook and present Japanese cuisine dishes in accordance with established recipes, plating standards and quality guidelines
Maintain strict food safety, hygiene and sanitation protocols across your station and throughout food preparation
Monitor food quality and consistency, making adjustments as necessary to meet company standards
Manage inventory and food stock for your station, including portioning, storage and waste minimization
Train, supervise and mentor junior kitchen staff and commis chefs working under your direction
Collaborate with the head chef and other sections to ensure smooth kitchen operations during service
Assist with menu development and refinement of Japanese dishes where appropriate
Maintain kitchen equipment and report any maintenance issues promptly
Adhere to all company policies, procedures and health and safety regulations
Minimum 3-5 years of professional kitchen experience, with substantial experience in Japanese cuisine preparation
Proven experience working as a Chef de Partie or equivalent senior kitchen position in a similar establishment
Strong knowledge of authentic Japanese cooking techniques, ingredients and traditional food preparation methods
Proficiency in preparing Japanese dishes including sashimi, nigiri, maki, tempura, teriyaki and other signature Japanese cuisines
Excellent knife skills and precision in food preparation and plating
Sound understanding of food safety standards, HACCP principles and kitchen hygiene protocols
Ability to work efficiently under pressure whilst maintaining quality standards during peak service periods
Strong leadership and interpersonal skills with the ability to motivate and develop junior kitchen staff
Excellent organizational and time management abilities
Physical capability to perform standing duties for extended periods and handle physically demanding kitchen work
Relevant culinary qualifications or certifications (preferred)
Fluency in English or Filipino, with basic Japanese language skills being advantageous
