Vikings Group of Companies is seeking an experienced Chef de Partie Pastry to join our culinary team in Mandaluyong City, Metro Manila. This is a full-time position that plays a crucial role in maintaining the excellence and reputation of our pastry and dessert offerings across our hospitality operations. As Chef de Partie Pastry, you will lead the pastry section with creativity, precision, and professionalism, ensuring every creation meets our exacting standards whilst contributing to the overall success of our food and beverage services.
Overseeing the daily production of pastries, desserts, and baked goods to consistent quality standards
Developing and executing innovative pastry recipes and seasonal menu items that align with Vikings Group’s culinary vision
Managing mise en place and ensuring all pastry stations are properly prepared and organised for service
Training, supervising, and mentoring junior pastry chefs and kitchen staff within the pastry section
Maintaining strict adherence to food safety, hygiene, and sanitation regulations at all times
Controlling portion sizes and managing food costs to optimise profitability without compromising quality
Collaborating with the Executive Chef and other kitchen departments to ensure seamless service delivery
Monitoring inventory levels and ordering pastry supplies, ingredients, and equipment as required
Creating visually appealing and sophisticated plated desserts that enhance the dining experience
Remaining current with pastry trends and techniques whilst maintaining our traditional standards
Formal culinary qualification or professional pastry training from a recognized institution
Minimum 5 years' professional experience as a pastry chef or Chef de Partie in a high-volume, upscale hospitality environment
Advanced proficiency in pastry techniques including bread baking, cake decoration, chocolate work, and sugar artistry
Demonstrated expertise in creating both classical and contemporary desserts and pastry items
Strong knowledge of food safety standards, HACCP principles, and kitchen hygiene protocols
Proven ability to manage and lead a team effectively with excellent communication skills
Excellent organizational and time management abilities, particularly under pressure during service periods
Strong attention to detail with a commitment to precision and consistency in all work
Proficiency in English; additional languages are advantageous
Physical capability to work in a fast-paced kitchen environment and stand for extended periods
Experience with modern pastry equipment and kitchen technology is preferred
Flexibility to work varied shifts, including evenings, weekends, and public holidays as required
