Bruto Group Ltd is seeking experienced Chefs De Partie to join Bruto Hospitality across three venues in Wanaka. You will manage a section, maintain quality, and mentor junior cooks while contributing to menu development and seasonal specials.

We’re looking for experienced, driven Chefs De Partie's to join us across our 3 venues, not just employees, but people who care about delivering the full dining experience to the locals and visitors to Wānaka.
Sofi Mediterranean Bar & Grill – A contemporary, sun-drenched space celebrating the bold, fresh flavours of the Mediterranean coastline, highlighted by grilled seafood, curated mezze, and an inventive beverage list.
Cabin Woodfired Kitchen – A warm, hearth-driven dining room centered around the primal art of open-fire cooking, showcasing prime cuts and local produce kissed by smoke and flame.
Francesca Italian – A lively, Michelin bib gourmand rated and beloved staple rooted in classic Italian hospitality with a Wanaka spin, serving handcrafted pastas, wood-fired pizzas, and timeless regional favourites designed for good times.
We aren't looking for "rockstars" or egos. We’re looking for genuine, hard-working professionals who give a damn about the plate and the people.
Experience & Skills Required: You must have a minimum of 3 years relevant commercial kitchen cooking experience. Alternatively, a relevant commercial cookery qualification at NZQF Level 4 (or equivalent international qualification) paired with proven kitchen experience will be highly regarded.
Service Capability: You know how to hold down your section through a 200-cover Friday night roster without losing your cool.
Standards: You respect your ingredients, and you know how to run a section that’s clean, organised, and efficient. We have a great team of chefs. We need people who want to learn, pass on knowledge to the commis chefs, and lead by example on the line.

Section Execution: Preparing, cooking, and presenting high-quality dishes within your specific assigned section.
Stock & Prep Management: Ordering and managing stock and the daily mise en place of your section according to strict food safety procedures.
Cost Control: Diligently monitoring portion sizes and active waste control to keep the kitchen sustainable and profitable.
Recipe Standards: Able to confidently follow and respect established recipes and techniques.
Menu Collaboration: Assisting the Head Chef and Sous Chef in creating menu items, testing recipes, and developing new dishes.
Technical Skills: Confidently preparing proteins, including meat and fish, from scratch.
Safety & Compliance: Assisting with the management of health and safety for the entire venue, ensuring total adherence to Food Control Plans (FCP).
Team Mentorship: Leading by example on the line and assisting with the training of Commis Chefs.
Kitchen Culture: Respecting yourself and others within the kitchen and broader restaurant team.
Professionalism: Maintaining excellent personal hygiene and presentation, and acting in a professional manner at all times.
Employment Type: Full-time, Permanent.
Guaranteed Hours: Guaranteed minimum of 35 hours up to 50 hours per week, worked on a rotating roster including weekends and evening shifts.
