James Cook Hotel Grand Chancellor Wellington is seeking a Breakfast Chef to join our busy kitchen team. The role starts early, aiming to have breakfast ready by 6.30am, with live cooking and guest liaison during service in a high-volume hotel.

Hotel Grand Chancellor – Wellington Central, North Island

The James Cook Hotel Grand Chancellor is one of Wellington’s most well-known Hotels. We are part of the Grand Hotels International group with hotels located throughout New Zealand, Australia, Malaysia and Singapore. Grand Hotels International is known for quality accommodation, exceptional service, convenient locations and outstanding conference and meeting facilities.

James Cook Hotel Grand Chancellor is home to Whitby’s Restaurant and Bar which is famous for its superb a la Carte and Buffet menu. We also operate a smaller more intimate restaurant, Sojourn Café and Bar, 8 Conference & Event rooms and a 24-hour room service menu available for guests staying in one of our 269 guest rooms.

We are currently looking for a Breakfast Chef. The role covers opening, food preparation, buffet set-up, live-cooking and replenishment of food items. The rostered start time is 4am.

The ideal candidate for this role will have:

• A minimum of one years’ experience as Breakfast Chef
• A qualification or a Diploma in Culinary Arts
• An understanding of Health and Safety particularly that of Wellington city Food safety regulations
• A passion for the food industry
• The ability to cope under pressure
• A planned and organised approach to their work
• Be able to work in a fast-paced environment
• Experience in high volume breakfast covers in a restaurant
• Experience in a hotel environment is advantageous

This position will include, but is not limited to:

• Ensure breakfast is fully prepared and service-ready by 6.30am
• Maintain food quality, presentation, temperature and availability throughout service.
• Live cooking and liaising with guests.
• Maintain Chomp, food safety, hygiene and workplace Health & Safety requirements
• Be responsible for the quality and quantity of work performed in the department.
• Liaise with Kitchen Hands to ensure all material and utensils are ready for service.
• Ensure adequate levels of mis-en-place are prepared and maintained as required for service.
• Ensure all required breakfast items are available for expected number of guests
• Rotate stock daily to ensure all fridges and freezers are kept tidy.
• Pay attention to ensure all equipment is used in a safe and correct manner to avoid accidents.
• Candidates for this role must be available for a 7-day rotating roster, including weekends.The rostered times will be 4am-12.30pm
