Job summary

voco The Hague is seeking a passionate Breakfast Chef to lead morning kitchen operations in a historic hotel in The Hague. You will set up back-of-house processes, develop menus for Ultramarijn and Botanica, and coach a team to deliver exceptional breakfast experiences.

The role requires at least 3 years in a similar four-star hotel or restaurant, culinary training, and strong leadership. A desire to learn, and a positive team spirit, will help you thrive in our international hotel.

Qualifications

• Minimum of 3 years’ experience in a similar position at a four-star hotel or restaurant.
• Certification of culinary training & food handling certificate; Leermeester certificate is a plus.
• Knowledge of English; Dutch preferred.

Responsibilities

• Set up kitchen and back-of-house processes, ensuring tools, supplies and equipment meet demand; coordinate deliveries and maintain cleanliness and safety.
• Develop menus for Ultramarijn, Botanica, room service, events and other outlets; write and test recipes.
• Forecast gastronomical and social trends to stay current with brand standards.
• Source local suppliers to support a sustainable menu.
• Interview and build a kitchen team aligned with voco standards and outlet needs.
• Collaborate with restaurant and bar leads to ensure proper food and beverage pairing.
• Control food costs to stay within budget; minimize waste and optimize use of excess items.
• Ensure all kitchen team members have up-to-date recipe cards, production schedules, plating guidelines, and photos; ensure recipes are executed accordingly.
• Oversee and direct kitchen operations training; maintain ongoing training programs and reassess roles as needed.
• Develop and guide team members through coaching, feedback, and performance/development goals.
• Drive results and inspire others by leading by example.
• Prepare weekly kitchen schedules aligned with staffing guidelines and budget.
