TEA GARDEN MANAGEMENT SDN. BHD. is seeking a senior culinary developer to lead menu ideation, recipe creation, and cost management for our chain of restaurants in Malaysia.
You will translate market trends into new concepts while maintaining brand identity and quality standards. The role requires 5+ years in culinary development, strong creativity, and Mandarin communication skills. You will collaborate with finance, marketing, and supply chain to ensure successful rollouts across outlets,
Conceptualize and develop new menu items from ideation to final recipe creation.
Revise and enhance existing menu items based on customer feedback and market trends.
Ensure that all recipes meet taste, quality, portion control, and presentation standards.
Experiment with new ingredients, cooking techniques, and culinary trends to drive innovation.
Stay updated on industry trends and incorporate new ideas into menu development.
Introduce new culinary concepts that align with the brand's identity and customer preferences.
Develop detailed recipes with accurate ingredient lists, portion sizes, and cooking instructions.
Conduct food costing analysis to ensure new menu items meet profitability targets.
Collaborate with the finance team to establish pricing strategies for new products.
Conduct sensory evaluations and taste tests for new and revised menu items.
Gather feedback from internal stakeholders and focus groups to refine recipes.
Adjust recipes based on feedback to achieve optimal taste, cost efficiency, and operational feasibility.
Train kitchen staff and chefs on new recipes, cooking techniques, and portion control.
Provide ongoing support and guidance during menu rollouts and implementation.
Develop training materials and recipe guides for consistent execution across restaurant locations.
Work closely with the marketing team to align menu development with brand strategies and promotional activities.
Collaborate with the supply chain team to source quality ingredients at competitive prices.
Ensure compliance with food safety regulations and quality standards in collaboration with the quality assurance team.
Job requirement
Culinary degree or equivalent professional experience.
Minimum of 5 years of experience in culinary development, including food costing, preferably in a chain restaurant or similar setting.
Strong culinary skills with a creative and innovative approach to food.
Proficiency in recipe development, portion control, and food costing analysis.
Excellent understanding of food safety regulations and quality control.
Strong organizational, project management, and analytical skills.
Effective communication and interpersonal skills.
Ability to work in a fast-paced environment and manage multiple projects simultaneously.
Passion for food, culinary trends, and customer satisfaction.
Able to work at Taman Pelangi Indah, Ulu Tiram Johor Bahru
The ability to communicate in Mandarin is a must to effectively communicate with Mandarin-speaking clients.
