Job summary

INITIA Group SG is seeking a Culinary Operations Manager - (Group Kitchen) to oversee all back-of-house activities across Malaysia's multi-brand restaurant outlets. You will lead Head Chefs, Kitchen Managers, and BOH teams to ensure excellence in food quality, SOPs, and cost control.

The role requires 5+ years as a Head Chef in a reputed chain or 2+ years as a Group Head Chef, with strong leadership and HACCP knowledge. Travel between outlets across Malaysia is expected.

Qualifications

• Minimum 5 years of experience as a Head Chef in a reputable restaurant chain.
• Minimum 2 years of experience as a Group Head Chef overseeing multiple restaurant outlets or experience as an Operations Manager (Back of House).
• Proven experience managing kitchen operations across multiple outlets.
• Strong leadership experience managing Head Chefs and kitchen management teams.
• Extensive knowledge of kitchen operations, food production, food safety, HACCP, and quality assurance.

Responsibilities

• Oversee all back-of-house operations across multiple restaurant outlets in Malaysia.
• Lead and supervise Head Chefs, Sous Chefs, Kitchen Managers, and BOH teams to ensure operational excellence.
• Ensure consistent food quality, presentation, recipes, and portion control across all outlets.
• Develop, implement, and maintain kitchen SOPs and operational standards.
• Monitor kitchen productivity, manpower planning, scheduling, and labor efficiency.
• Drive food cost optimization, inventory control, and waste reduction initiatives.
• Work closely with Procurement to ensure timely sourcing of ingredients and kitchen supplies.
• Conduct regular kitchen audits to ensure compliance with food safety, hygiene, and company standards.
• Coach, mentor, and develop Head Chefs to strengthen leadership capabilities and succession planning.
• Analyze kitchen performance, food cost reports, wastage, and operational KPIs, implementing improvement plans where necessary.
• Support menu implementation, seasonal promotions, and new outlet openings.
• Collaborate with Outlet Managers to ensure seamless coordination between Front of House and Back of House operations.
• Identify operational challenges and implement continuous improvement initiatives across all kitchen operations.
