Job summary

Four Seasons Hotel Kuala Lumpur invites a seasoned Chief Baker to lead the bakery operation, delivering breads, viennoiserie, breakfast pastries and desserts across outlets, buffets and events with the highest quality standards.

You will supervise and coach the bakery team, plan daily production based on occupancy and menus, monitor costs and waste, ensure proper storage and labeling, and work closely with the Executive Pastry Chef to develop seasonal concepts.

Qualifications

• Diploma or professional qualification in Pastry Arts or Baking is required.
• Minimum 5–7 years of professional bakery experience in luxury hospitality.
• Proven experience supervising or leading a bakery/pastry team.
• Strong knowledge of artisan breads, viennoiserie, laminated doughs and sourdough.
• Excellent understanding of food safety, HACCP and sanitation standards.
• Solid experience with recipe costing, production planning and inventory control.
• Creative and quality‑driven with attention to detail.
• Strong communication, organizational and people‑management skills.
• Ability to work under pressure in a high‑volume luxury environment.
• English proficiency; Bahasa Malaysia proficiency is required.

Responsibilities

• Lead, supervise and develop the Bakery team to maintain high standards.
• Plan and organize daily bakery production according to occupancy and events.
• Produce breads, pastries, and desserts with consistent quality.
• Collaborate with Executive Pastry Chef on seasonal concepts.
• Monitor costs, yields, wastage and productivity; take corrective action.
• Ensure proper storage, labeling and HACCP compliance.
• Maintain recipes, production sheets and par levels.
